Mexican Fried Cauliflower Rice

Mexican Fried Cauliflower rice full of taco flavoring with bell peppers, and fried onions. Goes well as a side dish for any Mexican flavored recipes or meal

Ingredients

  • 4 cups frozen riced or riced cauliflower
  • 1/2 cup chopped onions
  • 3/4 tsp taco seasoning
  • 1/2 cup juices from "Slow Cooked Fajitas" see blog for recipe
  • 1 clove minced garlic

Instructions

  • Spray the frying pan with avocado or coconut oil. 
  • Fry up cauliflower, onions, and bell pepper. 
  • When the cauliflower is cooked through add taco seasoning, fajitas juices, salt, and minced garlic cook until liquid has been soaked up by the cauliflower. 
  • Remove from heat and serve with chopped cilantro for decoration.
