Mexican Fried Cauliflower Rice, when eaten with Slow Cooked Chicken Fajitas, will fool your brain into thinking you are eating rice.
Most days I am trying to broaden my horizon’s and seeing if I can figure out another side dish to eat with my meals. This Cauliflower rice is so tasty and an excellent side dish to any meal but especially Mexican food. Most of the time I have to create spice blend recipes from scratch. But that’s okay as it helps me grow as a recipe writer. As a matter of fact, I use my own taco seasoning blend in this recipe.
It is especially important to reserve the liquid from the slow cooker as it will have developed a rich depth of flavor that will intertwine and meld and enhance the cauliflower rice flavors. Indeed the juices will permeate the cauliflower rice with a rich, smokey, sweet and spicy flavor that will leave you daydreaming about this rice for days. This dish is complex in flavor with a burst of texture.
Together with Slow Cooked Fajitas, this side dish will fool your mind into thinking it is actual rice. Funny how the brain works.

Mexican Fried Cali-Rice
Ingredients:
- 4 cups frozen or riced cauliflower
- 1/4 cup chopped onions
- 3/4 cup chopped bell peppers
- 1 tsp taco seasoning
- 1/2 cup juices from slow-cooked fajitas
- 1/2 tsp salt
- 1 clove minced garlic
Directions:
Spray the frying pan with avocado or coconut oil. Fry up cauliflower, onions, and bell pepper.
When the cauliflower is cooked through add taco seasoning, fajitas juices, salt, and minced garlic cook until liquid has been soaked up by the cauliflower.
Remove from heat and serve with chopped cilantro for decoration.
