Put monk fruit sugar in a high powered blender.
Blend until a powder substance.
Pour the powdered sugar into a glass jar with a lid.
Cut vanilla bean in half and remove the seeds from the pod by scraping out the vanilla caviar.
Place the caviar and the cut vanilla pod into the sugar and stir.
Leave the vanilla pod and seeds in vanilla.
Let sit for two days. After two days use monkfruit powdered sugar use in any recipe.
