Ingredients

  • 1 1/2 cups Gingersnap Cookie Crumbs or other gluten-free cookie crumbs see the recipe on my blog
  • 2 oz mascarpone
  • 1/4 cup pumpkin puree
  • 1/8 cup powdered monk fruit sweetener
  • 1/8 cup maple syrup
  • 1/8 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp clove
  • 1 small pinch of allspice
  • 1 1/2 cup of white chocolate with monk fruit or stevia
  • 2 tsp bourbon

Instructions

Truffle Filling

  • First combine the cookie crumbs, pumpkin puree, sweetener, maple syrup, cinnamon, nutmeg, ginger, clove, and allspice until thoroughly combined.
    1 1/2 cups Gingersnap Cookie Crumbs or other gluten-free cookie crumbs, 2 oz mascarpone, 1/4 cup pumpkin puree, 1/8 cup powdered monk fruit sweetener, 1/8 cup maple syrup, 1/8 tsp nutmeg, 1/2 tsp cinnamon, 1/8 tsp ginger, 1/8 tsp clove, 1 small pinch of allspice

Making Bourbon Filling

  • First and foremost, for adult candy combine the bourbon with the filling ingredients thoroughly and follow the directions.
    2 tsp bourbon

Making the Truffles

  • First, melt the white chocolate in the microwave in 30-second intervals removing and stirring until smooth and melted.
    1 1/2 cup of white chocolate with monk fruit or stevia
  • Second, using a food paintbrush brush the sides and bottom of a silicone chocolate mold.
  • Next, place it into the freezer for 1 hour.
  • Repeat this step three times.
  • Begin by dropping a small amount of filling into each well
  • Finally, make sure to leave a small amount of room to brush chocolate over the tops.
  • Place the mold into the freezer for one hour
  • Finally, remove them and paint a layer of white chocolate on the bottoms.
  • In summary, place the candy back into the freezer for 1 hour.
  • Repeat this step two more times
  • Lastly, the third layer is added and placed into the freezer for the last time.
  • Remove and serve or gift away.
