Pumpkin Mascarpone Truffle Candy is a tasty candy with flavor in between, pumpkin pie, cheesecake, and truffles. This delicious edible tidbit is chock-full of pumpkin flavor enveloped in a thin white chocolate layer. A perfect autumnal treat for every age. Indeed, it would make a great placeholder with a name card for Thanksgiving. Incidentally, it would make a great guest gift. Each guest could get a small box or plastic bag with 4 Truffles each. Not to mention these little chocolates would make perfect homemade stocking stuffer gifts for all kids or grandkids. Needless to say, why not create a family tradition and memories for your kids and/or grandkids? Talk about being a popular grandparent.
Pumpkin Mascarpone Truffle Candy
In any case, these bite-size pieces of candy are addictive. Nevertheless, it is so irresistible that you won’t want to share. Hence, it reminds me of my childhood.
In conclusion, I grew up in Ririe, Idaho a very small town. Back in those days, for example, families would invite you into their homes. Consequently, every host would give each child hot chocolate or hot apple cider and homemade goodies such as candied apples, divinity, fudge, and popcorn balls. Last but not least, some of the older people would provide a craft for each child to complete. Because it was a small town everyone knew everyone we felt safe going inside the homes. While this sounds like ages ago it was not for me. Today this would be considered a bad choice.
However, these candies could be made for a child’s Halloween party or make them with Bourbon and make them for an Adult costume Halloween party.
Candy Making:
Nevertheless, this is a quick and easy candy. Incidentally, I use my Swedish Gingersnap recipe and turn them into crumbs. Next, combine cookie crumbs, mascarpone, pumpkin, and spices. No food processor is necessary. Hence, a rolling pin and a plastic bag can be used in place of the food processor. Candy can be placed in candy molds or the smallest cookie scoop can be used. If using a cookie scoop simply dip the truffles into melted chocolates. Not to mention, these little treats are hard to pass up. They are an amped-up cheesecake pumpkin truffle.

Pumpkin Mascarpone Truffle Candy
Ingredients:
- 1 1/2 cups of Gingersnap Cookie Crumbs or other gluten-free cookie crumbs
- 2 oz. mascarpone
- 1/4 cup pumpkin puree
- 1/8 cup powdered monk fruit sweetener
- 1/8 cup maple syrup
- 1/4 cup pumpkin puree
- 1/8 tsp nutmeg
- 1/2 tsp cinnamon
- 1/8 tsp ginger
- 1/8 tsp clove
- 1 pinch allspice
- 1 cup white chocolate chips sweetened with monkfruit
- *2 tbsp bourbon
Directions:
Truffle Filling
Firstly, using a small food processor turn the cookies into crumbs. Second, combine the cookie crumbs, pumpkin puree, sweetener, maple syrup, cinnamon, nutmeg, ginger, clove, and allspice until thoroughly combined.
Bourbon Adult Candy:
First and foremost, for adult candy combine the bourbon with the filling ingredients thoroughly and follow the directions
Creating Truffles:
First, melt the white chocolate in the microwave in 30-second intervals removing and stirring until smooth and melted. Second, use a food paintbrush to brush the sides and bottom of a silicone chocolate mold. Next, place it into the freezer for 1 hour. Repeat this step three times.
Third, drop a small amount of filling into each well of a candy mold. Or use the smallest cookie scoop. Place into the freezer before dipping into chocolate. Make sure to leave a small amount of room to brush chocolate over the tops. Finally, melt the white chocolate in the microwave in 30-second intervals removing and stirring until smooth and melted. Use a food paintbrush to brush the sides and bottom of a silicone chocolate mold. Next, place it into the freezer for 1 hour. Repeat this step three times.
Place the mold into the freezer for one hour. Finally, remove them and paint a layer of white chocolate on the bottoms. In summary, place the candy back into the freezer for 1 hour. Repeat this step two more times. Lastly, the third layer is added and placed into the freezer for the last time. Remove and serve or gift away.

Making Bourbon Filling

- Begin by dropping a small amount of filling into each well

- Finally, remove them and paint a layer of white chocolate on the bottoms.

- Repeat this step two more times
- Lastly, the third layer is added and placed into the freezer for the last time.
- Remove and serve or gift away.
