First, sterilize the canning jar and lid.
Second, place sliced bananas into a 1/2 pint canning jar.
1/2 cup sliced bananas
Finally, pour vodka on top of sliced bananas.
1/2 cup gluten-free vodka
On the fifth day remove bananas and strain out the liquid.
Toss infused bananas away.
In a small pan over medium heat add water, yacon, and maple sugar to the pan until a sweet syrup has developed approximately 4 minutes.
1/2 cup of water, 1/8 cup maple sugar, 1/8 cup yacon syrup
Pour the strained liquid into the cooled syrup and stir together.
Lastly, pour into a sterilized jar and store in the fridge.
Use as any other liqueur.
Good for up to 6 months.
