First, combine instant coffee, dutch cocoa, and boiling water and let sit for 10 minutes.
1 1/2 tsp instant coffee, 1/4 cup boiling water, 1/4 cup dutch cocoa
Second, in a heavy saucepan combine maple sugar, coconut oil, milk, and the instant coffee mixture.
1/2 cup maple sugar, 2 tbsp coconut oil, 4 tbsp coconut milk
Next, bring to a rolling boil stirring constantly and cook for 1 minute.
Pour in chocolate chips while stirring.
1/4 cup chocolate chips
Remove from heat and continue to stir until the chips are completely melted.
Allow frosting to cool slightly then refrigerate 1 hour.
Using an electric mixer blend the icing on high for 1 minute or until the mixture is spreadable.
Use frosting to frost a cake.
Makes approximately 1 and 1/4 cup of frosting.
Makes enough frosting to frost the sides and top of a two-layer 6-inch cake.
