Ingredients

  • 1/2 cup lemon juice
  • 3 lemons zest of
  • 4 whole eggs
  • 1/2 cup maple sugar
  • 1/2 cup butter

Instructions

  • First, remove lemon zest and add to maple sugar allowing the zest to infuse into it about 5 minutes.

  • Next, juice the lemons. 
  • Finally,  blend zest, lemon juice, sugar and eggs over a medium heat pan or double boiler.

  • Let sit over medium heat and constant stirring until it thickens to a cream approximately 10 minutes.
  • Remove from heat.
  • Next, stir in the butter. and place in jars or use right away.
