Refined Sugar-Free Lemon Curd is heaven on toast, scones, ice cream, or even pancakes. Just the very thought of this lemon curd spread over pancakes or a spoonful of it on ice cream will have you giggling with glee. A sweet and tart condiment. Indeed, it is a classic spread that can be eaten by a spoonful. Believe it or not, this condiment is out of this world. It is a wonderful pantry addition. In fact, it can also be used as a fruit dip.

Indeed, most people love lemons and the flavor of lemons. Not to mention that lemon curd is very popular in the UK. However, I am not much for overly sweet desserts. If you love tart recipes and lemons then this recipe will be a dream come true. Its uses are endless.
Tart Lemon Curd is so versatile that you will want to make a jar or two of this and keep it in your fridge. Use with my Gluten-Free Lemon Poppyseed Pancakes, or Gluten-Free | Grain-Free Lemon Poppyseed Waffles, Gluten-Free Swedish Midsummer Strawberry Cake.
Makes me think of Spring and summer when we think of lemon curd. Something about lemons makes us feel bright, cheery and refreshed. I prefer to add the lemon zest to any sugar I use to enhance it. Can be frozen for up to six months. Just place the lemon curd into the fridge and allow it to completely defrost before opening the jar. After thawing use within 3 weeks. Before freezing allow the curd to cool before placing it into a sterilized canning jar.

Refined Sugar-Free Lemon Curd
Ingredients:
- 1/2 cup lemon juice
- zest of three lemons
- 4 eggs
- 1/2 cup maple sugar
- 1/2 cup of butter
Directions:
First, remove lemon zest and add to maple sugar allowing the zest to infuse into it for about 5 minutes. Next, juice the lemons. Finally, blend zest, lemon juice, sugar, and eggs over a medium heat pan or double boiler. Let sit over medium heat and constant stirring until it thickens to cream for approximately 10 minutes. Remove from heat. Next, stir in the butter and place in jars or use right away.
