Smokey Roulade Chicken

Equipment

Ingredients

  • 6 chicken breasts
  • 1 1/2 tsp pink salt
  • 3/4 tsp black pepper
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 3 oz smokey cheddar cheese or cheese of your choice
  • 6 slices Canadian Bacon
  • 6 leaves large basil leaves
  • 6 thin half slices of onion
  • 3 tbsp coconut oil

Holiday Balsamic Glaze

  • 1/2 cup Pomegranate Juice (fresh or store bought)
  • 1/3 cup balsamic vinegar
  • 2 tbsp maple syrup

Optional decorations: Basil, pomegranate seeds, and/or Chopped onions.

Instructions

  • First, preheat oven to 325 F. Second, pound the chicken breast into a thin layer.
  • Next sprinkle each side of the chicken with approximately 1/8 teaspoon of pink salt, black pepper, garlic powder, and onion powder. 
    6 chicken breasts, 1 1/2 tsp pink salt, 3/4 tsp black pepper, 1 1/2 tsp garlic powder, 1 1/2 tsp onion powder
  • Finally, lay down a slice or two of smokey cheddar cheese top with a slice of Canadian Bacon topped with some onion and basil.
    3 oz smokey cheddar cheese, 6 slices Canadian Bacon, 6 leaves large basil leaves, 6 thin half slices of onion
  • Finally, roll chicken up into small rolls and place seam side down. 
  • Cut cotton butcher's twine to size and tie the chicken up.
  • Place about a tsp of coconut oil on top of each piece of chicken.
  • Place inside an oiled baking dish and bake for 25 - 35 minutes.

Instructions for Pomegranate Balsamic Glaze

  • Combine pomegranate juice, balsamic vinegar, and maple syrup in a pan.
    1/2 cup Pomegranate Juice (fresh or store bought), 1/3 cup balsamic vinegar, 2 tbsp maple syrup
  • Lastly, cook on medium heat until reduced by 1/3.
  • Glaze the top of your Baked Smokey Chicken Roulade.
  • Decorate with chopped basil and pomegranate seeds.
