Smokey Pomegranate Chicken Roulade stuffed with smokey cheddar, Canadian bacon, and basil is tasty, easy, and beautiful! Not to mention that this is art on a plate. Stunning to look at but even more fun to eat and delight your tummy. Needless to say, it can even be served when you are expecting company. Elegant and budget-friendly. Furthermore, it is so pretty you could serve it for a birthday, Valentine’s Day, or other special occasions.
What is the best way to preserve Pomegranates?
Crack them open remove the Arils (seeds) and lay them out in a single layer on a cookie sheet then place them in the freezer overnight. Finally, remove and place the Arils into a freezer bag and freeze. While pomegranates are beautiful and tasty they also make a great edible decoration. In fact, they are one of my favorite things to use to decorate my food.
Not only that but they also give any bite a bit of texture and crunch. In all honesty, food for me is very visual it should first be eaten with your eyes, secondly there should be a texture component and thirdly it needs to incorporate one of the 5 flavors such as sweet, sour, salty, and sour or spicy. However, if pomegranates are not in season top with Small Batch Lingonberry Jam.
Smokey Pomegranate Chicken Roulade Notes
While this dinner is very easy to prepare and is appealing to the eye. In all honesty, I used fresh pomegranates but if you can’t find fresh ones to decorate with try using frozen. In any case, you can use freshly juiced Pomegranate juice or store-bought whichever you prefer. As always, read the ingredients list on any item you purchase. Incredibly, I found Canadian Bacon I could eat at a local health food store. I had my chicken with roasted mashed butternut squash.
To tell the truth, this meal looked so pretty it would be a great meal for Valentine’s Day, Christmas, or even date night. Although this may look complicated it is very easy. Simply pound out the chicken until thin, then lay down a slice or two of smokey cheddar, Canadian Bacon, basil, and a small slice of red onion at last roll it up. Admittedly the last thing is to decorate with some torn basil leaves and pomegranate arils. Not only is this dish elegant but due to the fact it’s chicken, it is also economical.

Ingredients:
- 6 chicken breasts
- 1 1/2 tsp pink salt
- 3/4 tsp black pepper
- 1 1/2 tsp garlic powder
- 1 1/2 tsp onion powder
- 6 slices Canadian Bacon
- 3 oz smokey cheddar cheese or cheese of your choice
- 6 large basil leaves
- 6 thin slices of onion
- 3 tbsp coconut oil
Pomegranate Balsamic Glaze
- 1/2 cup Pomegranate Juice (fresh or store-bought)
- 1/3 cup balsamic vinegar
- 2 tbsp maple syrup
Optional decorations: Basil, pomegranate seeds, and/or chopped onions.

Ingredients
- 6 chicken breasts

- 6 leaves large basil leaves
- 6 thin half slices of onion
- 3 tbsp coconut oil
Holiday Balsamic Glaze
- 1/2 cup Pomegranate Juice (fresh or store bought)
- 1/3 cup balsamic vinegar
- 2 tbsp maple syrup
Optional decorations: Basil, pomegranate seeds, and/or Chopped onions.
Instructions
- First, preheat oven to 325 F. Second, pound the chicken breast into a thin layer.
- Next sprinkle each side of the chicken with approximately 1/8 teaspoon of pink salt, black pepper, garlic powder, and onion powder.6 chicken breasts, 1 1/2 tsp pink salt, 3/4 tsp black pepper, 1 1/2 tsp garlic powder, 1 1/2 tsp onion powder
- Finally, lay down a slice or two of smokey cheddar cheese top with a slice of Canadian Bacon topped with some onion and basil.3 oz smokey cheddar cheese, 6 slices Canadian Bacon, 6 leaves large basil leaves, 6 thin half slices of onion
- Finally, roll chicken up into small rolls and place seam side down.
- Cut cotton butcher's twine to size and tie the chicken up.
- Place about a tsp of coconut oil on top of each piece of chicken.
- Place inside an oiled baking dish and bake for 25 - 35 minutes.
Instructions for Pomegranate Balsamic Glaze
- Combine pomegranate juice, balsamic vinegar, and maple syrup in a pan.1/2 cup Pomegranate Juice (fresh or store bought), 1/3 cup balsamic vinegar, 2 tbsp maple syrup
- Lastly, cook on medium heat until reduced by 1/3.
- Glaze the top of your Baked Smokey Chicken Roulade.
- Decorate with chopped basil and pomegranate seeds.
