Ingredients

  • 1 tbsp coconut oil
  • 1 tsp maple sugar
  • 2 tbsp almond milk
  • 2 oz. Stevia White Chocolate Chips I used Lily's Brand
  • 1/4 cup powdered monk fruit sweetener

Instructions

  • First, add coconut oil, maple sugar, and almond milk to a.

  • Heat until sugar is dissolved and it has begun to simmer.
  • Remove from heat.
  • Finely chop the white chocolate chips.

  • Place the white chocolate into a bowl and pour the hot liquid over the top.
  • Set the mixture aside for two minutes.
  • Next, stir the chocolate into the hot liquid until melted and smooth.
  • Using a spatula remove the white chocolate mixture into a medium bowl.
  • Lastly, add the powdered monkfruit sweetener and beat it with a hand mixer until a thick and fluffy frosting is made.

  • Add more powdered monkfruit sweetener to thicken the frosting.
  • To solve a thick frosting add a tsp of almond milk at a time until the desired thickness is created.
  • Using a spatula place the frosting into a piping bag and frost two to four cupcakes or a small six-inch cake.
