Ingredients

  • 1 large acorn squash
  • 2 tbsp coconut oil
  • 1/3 cup nut milk
  • 2 tbsp maple syrup
  • 1/4 tsp nutmeg

Instructions

  • First and foremost, wash and remove any labels from the squash.
    1 large acorn squash
  • Second, preheat the oven to 375 F.
  • Place the squash on a baking sheet.
  • Carefully, pierce the skin of the squash several times with a knife.
  • Place the squash in the oven and bake for 30 minutes.
  • Turn the squash over and bake for an additional 30 minutes.
  • The flesh should be soft when pierced with a knife.
  • Remove from the oven and allow it to cool slightly.
  • Cut the squash in half and remove the seeds.
  • Finally, scoop out the flesh.
  • Add the squash flesh to a food processor.
  • Next, add in the coconut oil, nut milk, maple syrup, and nutmeg.
    2 tbsp coconut oil, 1/3 cup nut milk, 2 tbsp maple syrup, 1/4 tsp nutmeg
  • Process until smooth.
  • Add salt and pepper to taste if you wish and stir together.
  • Lastly, spoon into a serving bowl.
  • Serve
