Sweet Mashed Acorn Squash

Ingredients:

  • 1 large Acorn Squash about 3 lbs
  • 2 tbsp coconut oil
  • 1/3 cup nut milk
  • 2 tbsp maple syrup
  • 1/4 tsp nutmeg

First and foremost, wash and remove any labels from the squash. Second, Preheat the oven to 375 F. Place the squash on a baking sheet. Carefully, pierce the skin of the squash several times with a knife.

Place the squash in the oven and bake for 30 minutes. Turn the squash over and bake for an additional 30 minutes. The flesh should be soft when pierced with a knife. Remove from the oven and allow it to cool slightly. Cut the squash in half and remove the seeds. Finally, scoop out the flesh.

Add the squash flesh to a food processor. Next, add in the coconut oil, nut milk, maple syrup, and nutmeg. Process until smooth. Add salt and pepper to taste if you wish and stir together.
