Ingredients

For Crust

  • 1 cup cassava flour
  • 1/2 cup coconut oil
  • 3 tbsp powdered monk fruit sweetener 
  • 1 tsp lemon zest zest of one lemon
  • 1/2 cup chopped nuts optional nuts of your choice

Lemon Filling

  • 1/2 cup monk fruit sugar
  • 1/4 cup maple sugar
  • 1/2 cup fresh squeezed lemon juice
  • 1 tbsp olive oil
  • 3 zest from (3) lemons
  • 4 whole eggs
  • 4 tbsp tapioca flour
  • 1 pinch of salt

Instructions

For Crust

  • Preheat oven 350.
  • First, combine all ingredients.
    1 cup cassava flour, 1/2 cup coconut oil, 3 tbsp powdered monk fruit sweetener , 1 tsp lemon zest, 1/2 cup chopped nuts
  • Second, mix well until crumbly.
  • Press into ungreased 8 x8-inch baking pan. Bak
  • Bake for 12-15 minutes.

Tart Lemon Filling

  • First, beat eggs until frothy.
    4 whole eggs
  • Second, add the olive oil and whisk together.
    1 tbsp olive oil
  • Thirdly, add in the monk fruit sweetener and maple sugar.
    1/2 cup monk fruit sugar, 1/4 cup maple sugar
  • Fourthly, stir together the tapioca flour and salt
    4 tbsp tapioca flour, 1 pinch of salt
  • Next, combine eggs with lemon juice and zest.
    1/2 cup fresh squeezed lemon juice, 3 zest from (3) lemons
  • Blend in the egg mixture with the flour mixture for a minimum of 4 minutes.
  • Pour into hot crust.
  • Lastly, bake in a preheated oven at 350 for 25-30 minutes.
  • Let cool 3 hours and 2 hours in the fridge before cutting and eating. sugar.
  • Before eating top with powdered monk fruit sugar.
