Ingredients

  • 4 large baking potatoes or leftover baked potatoes
  • 1/2 cup sour cream
  • 1/4 cup cream cheese
  • 4 slices of bacon
  • 1/4 tsp garlic powder
  • 2 tbsp butter or coconut oil
  • 1/2 tsp pink salt
  • 1/8 tsp black pepper
  • 2 whole green onions green and white parts
  • 1/3 cup milk or almond milk

Instructions

Oven Baked

  • First, preheat oven to 375 F
  • Second, scrub potatoes clean.
  • Finally, prick the potatoes a few times with the tines of a fork.
  • Second, oil the potato skins and sprinkle with salt.
  • Next, place all the potatoes onto a cookie sheet and place into the oven for one 50-60 minutes.
  • Finally, cook until potatoes are easily pricked with a fork.
  • Next, remove from heat and let cool.
  • Slice in half.
  • Finally, follow directions for making the stuffing and filling potatoes

Microwave Instructions

  • First, scrub and prick potatoes with a fork.
  • Second, microwave the potatoes on high until cooked (approximately 6-10 minutes per side.
  • Remove potatoes from microwave and allow to cool.
  • Finally, follow directions for making the stuffing and filling potatoes

Making the Filling and how to stuff potatoes

  • Next, cut the bacon into small pieces.
  • Cook bacon and fry on the stove or cook in the microwave.
  • Set bacon aside.
  • Finally, cut potatoes crosswise.
  • Carefully scoop the center of the potatoes leaving a thin rim of potato for support.
  • Place the scooped out potatoes into a bowl
  • Next, place butter in the scooped out potatoes.
  • Finally, mash the potatoes with a potato masher.
  • Once the potatoes are mostly mashed add in the remaining ingredients.
  • Lastly, stir all the ingredients together until well combined.
  • Next, carefully stuff each potato skin with some mashed potatoes. 
  • Top with more cheese or green onions if desired. 
  • Lastly, place muffin tin with stuffed potato skins into the oven.
  • Bake 30 - 45 minutes or until the tops are slightly brown.
  • Remove from oven allow to cool slightly and serve.
  • To make it vegetarian simply omit the bacon.
