Next, cut the bacon into small pieces.

Top with more cheese or green onions if desired.
Lastly, place muffin tin with stuffed potato skins into the oven.
Bake 30 - 45 minutes or until the tops are slightly brown.
Remove from oven allow to cool slightly and serve.
To make it vegetarian simply omit the bacon.
