Twice Baked Loaded Potatoes are a comforting, hearty, and cheesy side dish. What is better than creamy mashed potatoes? Potatoes with bacon, cheese, and green onions are even better. Nevertheless, these little spuds are loaded with flavor. This dish disappears at dinner parties or BBQs. Indeed, it is a family favorite side dish. Not to mention, they immediately upgrade any dinner to a more elegant and decadent meal. Needless to say this pairs extremely well with steak or hamburgers. Any meal that goes with potatoes goes with Twice Baked.

At any rate, I will let you in on a little secret. Believe it or not, when I was little I didn’t care for potatoes. Why didn’t I like potatoes? Because I grew up in Idaho and we had potatoes for almost every meal. Incidentally, if you are not from the USA then you may not be aware Idaho is famous for potatoes. As a matter of fact, there is a Potato Museum in Pocatello, ID. Indeed, if you ever get visit the Panhandle of Idaho I highly recommend it. Almost like when I lived in Japan and had rice for almost every meal. However, as I grew up I loved them.

Twice Baked Loaded Potatoes
Ingredients:
- 4 baking potatoes or leftover baked potatoes
- 1/2 cup sour cream
- 1/4 cup cream cheese
- 4 slices of bacon
- 1/4 tsp garlic powder
- 2 tbsp butter
- 1/4 tsp onion powder
- 1/2 tsp salt
- 1/8 tsp white pepper
- 2 whole chopped green onions white and green parts
- 1/4 cup milk or almond milk.
Oven-Baked Directions:
First, preheat the oven to 375 F. Second, scrub, potatoes clean. Finally, prick the potatoes a few times with the tines of a fork. Second, oil the potato skins and lightly sprinkle with salt. Next, place all the potatoes onto a cookie sheet and place into the oven for 50-60 minutes. Finally, cook until the potatoes are easily pricked with a fork. Next, remove from the heat and let cool. Finally follow directions for making the stuffing and filling the potatoes.
Microwave Instructions:
First, scrub and prick the potatoes with a fork. Second, microwave the potatoes on high for 6-10 minutes per side. Remove the potatoes and allow to cool. Finally follow the directions for making the stuffing and filling the potatoes.
Direction for Filling and Stuffing Potatoes:
Furthermore, preheat the oven to 375 F. Next, cut the bacon into small pieces. Cook the bacon and fry on the stove or cook in the microwave. Set Bacon aside. Finally cut potatoes in half lengthwise. Carefully scoop the center of the potatoes out, leaving a thin rim of potatoes for support. Place the scooped potatoes into a bowl. Next, place the butter into the scooped out potatoes. Finally, mash the potatoes with a potato masher. Once the potatoes are mashed add in the remaining ingredients. Lastly, stir all the ingredients together until well combined. Next, carefully, stuff each potato skin with some of the filling. Top with more cheese and green onions if desired. Place potatoes onto a cookie sheet and place into the oven. Bake 30 – 45 minutes or until the tops are slightly browned. Remove from oven allow to cool and serve. To make it vegetarian simply omit the bacon.

- Carefully scoop the center of the potatoes leaving a thin rim of potato for support.
- Place the scooped out potatoes into a bowl
- Next, place butter in the scooped out potatoes.
- Finally, mash the potatoes with a potato masher.
- Once the potatoes are mostly mashed add in the remaining ingredients.
- Lastly, stir all the ingredients together until well combined.
- Next, carefully stuff each potato skin with some mashed potatoes.
- Top with more cheese or green onions if desired.
- Lastly, place muffin tin with stuffed potato skins into the oven.
- Bake 30 - 45 minutes or until the tops are slightly brown.
- Remove from oven allow to cool slightly and serve.
- To make it vegetarian simply omit the bacon.
