Ingredients

Instructions

  • First, preheat oven to 350 F. Second, grease cookie sheets.
  • Second, grease cookie sheets.
  • Place all ingredients into a bowl and mix until thoroughly blended.
    2 cups desiccated coconut flakes, 3 tbsp canned coconut milk just the thick part, 1/4 cup powdered monkfruit Sweetener, 1 tsp almond extract, 2 whole egg whites, 1 recipe coconut sweetened condensed milk
  • Next, use a cookie scoop to scoop out cookie dough onto prepared cookie sheets.
  • Place into the hot oven and bake 18 - 22 minutes or until slightly golden. Remove cookies to a cooling rack. Allow to cool and eat.
  • Remove cookies to a cooling rack.
  • Allow to cool and eat.

Optional Toast Coconut Directions:

  • To toast coconut spread desiccated coconut on a baking sheet and place into a preheated oven to 325.
  • Bake for 5 minutes.
  • Open the oven and stir the coconut.
  • Close the oven door and set a timer for 5 minutes.
  • If toasted remove or stir and return for another 5 minutes.
  • Once toasted remove from oven and allow to cool.
  • Wait for the coconut to be cooled before adding to the recipe.
