Dairy-Free Coconut Macaroons are delightful soft cookies any time of day. Soft, and chewy coconut centers will help melt all your troubles away. Sometimes something as simple as a cookie can make you feel just a little better. Not to mention, that these are some of the easiest cookies to make. Consequently, I make the homemade Coconut Sweetened Condensed Milk a day or two before and this cookie comes together in less than 5 minutes.
Dairy-Free Coconut Macaroons:
In fact, these cookies are made with my homemade sweetened condensed coconut milk and my powdered monkfruit sweetener. However, I highly recommend making the Coconut Sweetened Condensed Milk at least a day in advance. It is as simple as placing all the ingredients into the bowl and processing them. How easy is that? Therefore, if you love soft and centers then this is the cookie for you.
Occasionally, I toast the coconut to add more flavor and a texture component. Consequently, desiccated coconut flakes, canned coconut milk, monk fruit sweetener, and almond extract can all be found at Amazon.
*Optional Toast Coconut:
To toast coconut spread desiccated coconut on a baking sheet and place it into a preheated oven to 325. Bake for 5 minutes. Open the oven and stir the coconut. Close the oven door and set a timer for 5 minutes. If toasted remove or stir and return for another 5 minutes. Once toasted remove from oven and allow to cool. Wait for the coconut to be cooled before adding to the recipe.

- 2 cups desiccated coconut flakes
- 1 recipe coconut sweetened condensed milk
- 3 tablespoons canned coconut milk just the thick part
- 1/4 cup powdered monkfruit Sweetener
- 1 tsp almond extract
- 2 egg whites
Directions:
First, preheat the oven to 350 F. Second, grease cookie sheets. Next, place all ingredients into a bowl and mix until thoroughly blended.
Next, use a cookie scoop to scoop out cookie dough onto prepared cookie sheets. Place into the hot oven and bake 18 – 22 minutes or until slightly golden. Lastly, remove cookies to a cooling rack. Allow to cool and eat.

I have never made macaroons but heard a lot about it. This looks easy to make, wondering if they can be made eggless.
