Ingredients

Spinach Strawberry Lobster Salad

  • 6 oz Spinach
  • 1 tbsp chopped red onions
  • 1/4 cup fresh whole or sliced strawberries
  • 2 tbsp toasted chopped hazelnuts
  • 2 tbsp micro greens
  • 1/2 cup cooked lobster

Lobster Oil Strawberry Tops Vinaigrette

  • 1 tbsp homemade lobster oil or olive oil Find homemade Lobster Oil on my blog
  • 3 tbsp Strawberry Tops Vinegar Find the recipe for this on my blog
  • 4 tbs freshly squeezed lemon juice
  • 1/8 tsp Dijon mustard
  • 1 1/4 tbsp monkfruit sweetener
  • *2 tbsp feta cheese optional
  • *4 tps fresh blueberries optional

Instructions

Spinach Strawberry Lobster Salad for Two

  • First, place the spinach on the plate.
    6 oz Spinach
  • Second, place red onions, strawberries, hazelnuts, and micro greens.
    1 tbsp chopped red onions, 1/4 cup fresh whole or sliced strawberries, 2 tbsp toasted chopped hazelnuts, 2 tbsp micro greens
  • Lastly, place the lobster on the salad.
    1/2 cup cooked lobster

Lobster Oil and Strawberry Tops Vinaigrette

  • First but not least, measure carefully and pour into a sterilized glass jar.
    1 tbsp homemade lobster oil or olive oil, 3 tbsp Strawberry Tops Vinegar, 4 tbs freshly squeezed lemon juice, 1/8 tsp Dijon mustard, 1 1/4 tbsp monkfruit sweetener, *2 tbsp feta cheese, *4 tps fresh blueberries
  • Second, screw the lid on.
  • Third, shake the jar until the ingredients are combined.
  • Before serving dress the salad to your liking.
  • Add in the feta and blueberries for a more patriotic salad or the 4th of July.
