Believe it or not, one of the things I miss the most going gluten-free and refined sugar-free is bread. Under these circumstances, I am always trying to recreate the items I miss the most. Needless to say, donuts are one of the things I miss the most. In fact, I adore chocolate. Because of a craving for chocolate and also for donuts I, therefore, I decided to create a recipe with my two loves.
Gluten-Free Chocolate Cake Donuts:
Admittedly I am always trying to heighten the chocolate flavor. It is for this reason that I add instant coffee to most chocolate recipes thereby creating a more intense flavor of chocolate. My daughter, however, is a vegan and definitely wanted her to be able to enjoy a donut as well. At any rate, these were the things on running through my mind when I consequently wrote this recipe.
In any case, I am not fond of the texture of gluten-free dessert items with only almond flour. I think the texture leaves something to be desired. Incidentally, a combination of cassava flour and almond flour gives the same texture of baked goods like those that utilize flour. Gluten-Free Chocolate Cake Donuts
Ingredients:
- 6 tbsp boiling water
- 2 tsp instant coffee
- 1 tsp vanilla
- 1 tbsp flax meal
- 2 tbsp coconut oil
- 1/2 cup almond flour
- 1/2 cup cassava flour
- 1/4 cup powdered cocoa
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 2 tbsp maple sugar
- 3 tbsp monk fruit sweetener
- 2/3 cup coconut milk
Directions for Gluten-Free Chocolate Cake Donuts:
Preheat 325 F. Oil a six-hole doughnut pan. First, combine boiling water, instant coffee, vanilla, flax meal, coconut oil, and set aside. Second add almond flour, cassava flour, baking soda, baking powder, and powdered cocoa, maple sugar, monk fruit sweetener, and stir until combined. Combine the instant coffee mixture and the coconut milk together.
Lastly, combine the liquid mixture with the dry mixture until combined. Spoon batter into a donut pan. Place pan in the oven and bake 12 -20 minutes. Next, remove doughnuts and allow them to cool for a few minutes in the pan. Remove from the pan and transfer to a cooling rack.
Refined Sugar-Free Chocolate Glaze
Ingredients:
- 18 grams dark chocolate
- 3 tbsp almond milk
- 4 tbsp monk fruit
- 1 tbsp coconut oil
Directions:
First, melt chocolate in the microwave for 30-second intervals. After 30 seconds remove and stir in coconut oil. Return chocolate to the microwave for 30 seconds. Once melted add in monk fruit and almond milk. Continue to return to the microwave for 30-second intervals until chocolate glaze is the desired thickness. Lastly, dip doughnuts into the bowl and return to the cooling rack until the glaze dries. Finally after waiting it is time to eat them. YUM
