Smokey Salisbury Steak has a smokey hickory flavor that will knock your socks off. So delicious it will have you licking your plate clean. Believe it or not, the hickory flavor comes from liquid smoke. In fact, this is my amped-up revisional twist on a classic nostalgic vintage recipe from my childhood. Needless to say, vintage recipes are like liquid gold and feed the world with recipes from days gone by. Moreover, these classic recipes can be reinvented to create new flavors. In conclusion, this recipe is also gluten-free and low-carb.
I was asked where my recipes come from. In any case, I pray a lot for inspiration. Some days I am not sure what to make. So I guess you could say sometimes a recipe just comes to me from out of the blue or from a more heavenly source. Not to mention, sometimes a recipe or idea comes to fruition weeks after thinking about it. While at other times, I make it several times and feel it still needs more tweaking. I tweak and tweak until I feel it’s finally right. Needless to say, I can get really frustrated with a recipe that it may be a while before I try improving it again.
Smokey Salisbury Steak
The Vintage Classic recipe calls for hamburger meat I decided to use ground turkey to create a little healthier version recipe. Originally, Salisbury Steak is formed into ovals. You can, however, form your Salisbury Steaks anyway you want. In any case, it was a lot easier for me to simply form them into patties.
In all honesty, this was one of the very first recipes that I came up with when I went grain-free, gluten-free, and refined sugar-free for health reasons. My desire is to make something similar to Swedish meatballs with a bold bbq flavor. I add smoked paprika and hickory liquid smoke. It makes it taste like the meat has sat in a smoker for hours. This is one of my favorite meals to make. Make with mashed potatoes, cauliflower rice, or cauliflower pilaf.
In fact, since, this recipe is gluten-free you will need to use my AKA Worcestershire Sauce and Garlicky Onion Seasoning. Incidentally, by the way, Coconut Aminos, Smoked Paprika, and Hickory Liquid Smoke are both found on Amazon.

Smokey Salisbury Steak
Ingredients:
- 2 tbsp avocado oil
- 1/2 cup chopped onion
- 1/2 cup chopped mushrooms
- 1 clove garlic
- 1 lb ground turkey
- 1 teaspoon smoked paprika
- 1 teaspoon balsamic vinegar
- 1 teaspoon coconut aminos
- 1 teaspoon Hickory Liquid Smoke
- 3 teaspoons AKA Worcestershire Sauce
- 2 tablespoons Garlicky Onion Seasoning
Directions:
Heat avocado oil in a large frying pan on medium heat until the oil is hot. Add onions, mushrooms, and garlic, and fry until the mushrooms are golden brown. Remove from heat. Allow the onion mixture to cool. Once cool add onion mixture to ground turkey. Add smoked paprika, balsamic vinegar, coconut aminos, liquid hickory smoke, Worcestershire Sauce, and Garlic Onion Seasoning to the ground turkey and onions.
Blend together with your hands as you would do with meatballs. Blend until well combined. Form small patties. Heat the frying pan that you fried onions mixture. Allow the pan to get hot before adding the patties. Add the patties and cook for approximately 5 minutes per side.
If you would like mushroom gravy to go on top then follow the remaining instructions. Preheat oven to 250. If you want to make gravy place patties into a dish to keep the patties warm while you make gravy.
Smokey Mushroom Onion Gravy
- 2 teaspoons avocado oil
- 1/2 cup finely chopped onions
- 1/2 cup sliced mushrooms
- 3 -6 cups chicken broth (homemade or store-bought)
- 1 teaspoon AKA Worcestershire Sauce
- 1/4 teaspoon smoked paprika
- 1 teaspoon balsamic vinegar
- 1/2 teaspoon liquid hickory smoke
- 1 teaspoon coconut aminos
- 1/2 teaspoon pink salt
- 2 tablespoons tapioca flour
- 5 tablespoons water
Directions:
Heat avocado oil on medium heat in the frying pan you fried up the Smokey Garlic Patties. Allow oil and pan to get hot. Once hot add onions and mushrooms to the pan. Fry up sliced onions and mushrooms until golden brown.
Add chicken broth to the cooked onions and mushrooms. Add AKA Worcestershire Sauce, Paprika, balsamic vinegar, liquid hickory smoke, coconut aminos, and pink salt. Stir until well combined. Take a spoon and taste the gravy if it needs salt or pepper adjust.
Place tapioca into a cup and add cold water. Stir to make a slurry. Once the slurry is made pour and stir while pouring into the chicken broth mixture. Continue stirring until thickened. If you have placed Smokey Garlic Patties into the oven, remove them and place them into the gravy. Once they have been covered in gravy turn the heat off and serve. Serve with mashed potatoes, riced cauliflower, or rice.

- 1 lb ground turkey
- 1 tsp smoked paprika
- 1 tsp balsamic vinegar
- 1 tsp coconut aminos
- 1 tsp hickory liquid smoke

Smokey Mushroom Onion Gravy
- 2 tsp avocado oil
- 1/2 cup chopped onions
- 1/2 cup sliced mushrooms
- 3 - 6 cups chicken broth (homemade or store-bought) depending on how much gravy you like
- 1 tsp AKA Worcestershire Sauce
- 1/4 tsp smoked paprika
- 1/2 tsp hickory liquid smoke
- 1 tsp coconut amino's
- 1/2 tsp salt
- 2 tbsp tapioca flour
- 5 tbsp of water
Instructions
- First, heat avocado oil in a large frying pan on medium heat until oil is hot.2 tbsp avocado oil
- Second, add onions, mushrooms, garlic, and fry until mushrooms are golden brown and caramelized.1/2 cup finely chopped onions, 1/2 cup chopped or diced mushrooms, 1 whole clove of garlic
- Next, remove from heat.
- Once cooled add onion mixture to ground turkey.1 lb ground turkey
- Add smoked paprika, balsamic vinegar, coconut aminos, liquid hickory smoke, AKA Worcestershire Sauce, and Garlic Onion Seasoning to the ground turkey and onions mixture.1 tsp smoked paprika, 1 tsp balsamic vinegar, 1 tsp coconut aminos, 1 tsp hickory liquid smoke, 3 tsp AKA Worchestershire Sauce, 2 tbsp Garlicky Onion Seasoning
- Blend together with your hands as you would with meatballs and until well combined.
- Form the meat into small patties.
- Heat the frying pan that you fried the onions mixture in.
- Allow pan to get hot before adding the patties.
- Add the patties and cook approximately 5 minutes per side.
- If you would like mushroom gravy to go on top then follow the remaining instructions.
Notes:
- Preheat oven to 250 F.
- To Keep warm place the meat patties into an oven-safe dish and place them into the oven once it is at 250 F.
Mushroom Onion Gravy Instructions:
- First, heat avocado oil on medium heat in the frying pan you fried up the Salisbury Steaks.2 tsp avocado oil
- Next, allow oil and pan to get hot.
- Once hot add onions and mushrooms to the pan.
- Fry up sliced onions and mushrooms until golden brown.1/2 cup chopped onions, 1/2 cup sliced mushrooms
- Add chicken broth to the cooked onions and mushrooms.3 - 6 cups chicken broth (homemade or store-bought)
- Next add in AKA Worcestershire Sauce, Paprika, balsamic vinegar, liquid hickory smoke, coconut aminos, and pink salt.1 tsp smoked paprika, 1/4 tsp smoked paprika, 1/2 tsp hickory liquid smoke, 1 tsp coconut amino's, 1/2 tsp salt, 5 tbsp of water, 1 tsp AKA Worcestershire Sauce
- Finally, stir until well combined.
- Take a spoon and taste the gravy if it needs salt or pepper adjust.
- Next, place tapioca into a cup and add cold water.
- Stir to make a slurry making sure to get all the tapioca from the bottom incorporated into the water.2 tbsp tapioca flour, 5 tbsp of water
- Once the slurry is made pour and stir while pouring into the chicken broth and mushroom mixture.
- Continue stirring until thickened.
- If you have placed Smokey Salisbury into the oven remove and place them into the gravy.
- Once they have been covered in gravy and heated through turn the heat off and serve.
- Serve with mashed potatoes, riced cauliflower, or rice.
