Gluten-Free Huckleberry Waffles are chock full of Huckleberries with a soft and crispy exterior. If you have never had Huckleberry waffles you are in for a treat. These light and airy waffles will fulfill your breakfast dreams. Needless to say, they are bursting with berries in each and every bite. Not to mention they are even better when topped with huckleberry sauce.
Gluten-Free Huckleberry Waffles:
Nevertheless, I grew up in Idaho. Idaho is full of Huckleberry products. Indeed, almost every store sells some sort of Huckleberry product. Furthermore, many restaurants have an in-season of Huckleberry items. Needless to say, items include ice cream, muffins, pies, lemonades, milkshakes, sodas, etc. As a matter of fact, there are also Huckleberry candies and fudges.
Huckleberry Waffles is a Pacific Northwest American breakfast favorite.
Huckleberry Notes:
Huckleberries may look like blueberries but they are not. In fact, huckleberries have their own unique flavor and often grow wild in the Pacific Northwest of the USA. Indeed, these berries are more expensive than blueberries. As a matter of fact, Huckleberries are Native plants of the Pacific Northwest. They have long been used by Native Americans as medicine as well as a food source. In fact, they are full of antioxidants and are high in vitamin C. Not to mention they grow high in the mountains and reach their peak in August. Not to mention, Huckleberries are the state fruit in Idaho and Montana. Huckleberries also grow wild in Oregon, Washington, and Wyoming. Most importantly, be careful before picking. Make sure you know which berries are huckleberries and which are poisonous.
Nonetheless, Scientists and researchers have been unable to domesticate the Huckleberry. Almost all huckleberries are from the wild. Hence, a pound of fresh huckleberries can cost more than $65 a pound. The best place to find fresh huckleberries is at Farmer’s Markets. However, even then they may be frozen as they have a short shelf life. Indeed, many huckleberry bushes are found in National Parks.

Gluten-Free Huckleberry Waffles
Ingredients:
- 2 eggs
- 2 tbsp monk fruit
- 2 tbsp coconut sugar
- 1 cup coconut buttermilk
- 2 tbsp melted coconut oil
- 1/2 + 4 tsp cup cassava flour
- 1/2 cup almond flour
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1/8 tsp salt
- 3/4 cup fresh or frozen Huckleberries
Directions For Gluten-Free Huckleberry Waffles:
First, preheat the waffle iron. Second, separate the eggs into separate bowls. Thirdly, beat the egg whites until stiff and set aside. Next, blend together the egg yolks, monkfruit sweetener, coconut sugar, and coconut buttermilk. Finally, combine the huckleberries with 4 tsp of cassava flour and stir together. This way the berries won’t lump together. In a separate bowl stir together cassava flour, almond flour, baking powder, baking soda, and salt until well blended. Finally, combine the flour mixture and the egg mixture until thoroughly combined. Next, fold the egg whites in until combined. Drop dollops of Huckleberries all over the batter. Lastly, fold in the floured Huckleberries into the batter. Do not over-blend. Place approximately 1/4 to 1/2 a cup of batter into a waffle maker. Finally, cook waffles one at a time until crispy. Cook for approximately 2-3 minutes per waffle. Makes about 5-6 waffles.
Notes:
If using frozen berries defrost them first. Secondly, drain the defrosted berries before using them in the above recipe.

- Approximately 2-3 minutes per waffle.
