Indeed summertime calls for meals to be made outside. After all, summer is a time for relaxing and getting more sun. Hence, everyone is in the backyard bbq’ing or going on picnics. Not to mention, COVID-19 had most of us cooped up. Despite everything that has happened these couple of years it is a time to celebrate being alive. Needless to say, I for one am ready to celebrate with some new recipes and meals in the great out of doors. In fact, I hope to be able to see and hang out with friends soon. Consequently, I am still recovering from covid pneumonia. I hope to be back on my feet without an oxygen tank very soon.
Creamy Southwest Salad Dressing
In all honesty, I really enjoy eating salads with protein. Therefore, this recipe came about as a way to create a southwest flavor for a steak, chicken, or pork salad. Hence, the inspiration for this recipe comes from tacos and fajitas. Believe it or not, it can be used as crema. In any event that is how I used it on my Gluten-Free Mexican Chicken Pizza. Occasionally, I have even used it to replace mayo on my gluten-free hamburger buns. Nonetheless, say goodbye to dull burgers and add some zip. In a word, move over Ranch Dressing there is a new kid in town. In conclusion, I do hope you will give this recipe a try.
