- 1 1/2 cups gluten-free old-fashioned rolled oats

First, preheat the oven to 350 F. Second, line two cookie sheets with parchment paper. Third, in a large bowl stir together the cassava flour, pumpkin pie spice, cinnamon, baking soda, and pink salt until thoroughly combined. Fourth, add the coconut oil to the bowl of a stand mixer with the paddle attachment and beat until creamy. Add in the maple sugar and blend for two minutes.
