Homemade After-Dinner Chocolate Mints
Directions
- 2 oz. chopped homemade chocolate or chocolate of choice
- 1 oz. chopped homemade white chocolate or chocolate of choice
- 3/4 tsp coconut oil
- 1/2 tsp peppermint or mint of choice
- 1 drop of green natural food coloring (optional)
Necessary Equipment
- (3 oz.) chocolate bar mold
- a spatula
- offset spatula
- Foil Candy Wrappers Optional
First Layer Directions:
First, add one ounce of chocolate to a small glass or bowl. Second, add 1/4 tsp coconut oil. Third, place into the microwave and heat on high for 30 seconds. Remove and stir the chocolate. Return to the microwave for another 30 seconds. Remove and stir. Continue to stir until melted. Mine only took twice. If necessary place it back in for 10-second intervals proceeding to stir after each interval. This procedure will need to be completed two more times for the middle and bottom layers.
Finally, drizzle the melted chocolate all over the bottom of the mold. Next, using an offset spatula make sure the chocolate is evenly coated on the bottom. Place into the freezer for 5 minutes.
Second Layer
First, repeat the same directions for melting the chocolate bottom layer, from above. Second, stir until melted. Add the mint extract and food coloring if desired. Third remove the mold from the fridge.
Working very carefully and quickly place a small amount of the white chocolate on top of the dark chocolate. Gently spread. If you don’t work quickly the warm chocolate will harden to the dark and you will not be able to spread it. Continue putting in a small amount at a time and spreading it to all the edges. Spatula in the remaining chocolate and cover the bottom. Using the offset spatula spread it evenly all over the bottom. Lastly, place it into the freezer for 5 minutes.
Third Layer
First, repeat the same directions as given above for melting the top layer. Second, remove the chocolate from the fridge. Again work carefully and quickly as the warm chocolate will freeze if you don’t spread it quickly.
Spread a small amount of chocolate in and spread over the white chocolate layer. Continue to place small amounts and spread to cover until the bottom is covered. Spatula in the remaining amount and use the offset spatula to spread it evenly. Place it into the freezer for 5 to 10 minutes. Remove and break into small rectangles or carefully cut them so they don’t break.
Place chocolates in foil wrappers and wrap them up. Best kept in the refrigerator.

- Place it into the freezer for 5 to 10 minutes.
