A creamy chocolate center with crunchy granola is a treat for any time.
Tigernut Butter Granola Truffles
Indeed, these tigernut treats pack a big chocolatey punch. The centers are creamy with bits of granola inside. Tigernuts have been eaten for centuries. Furthermore, eaten and used medicinally in ancient Egypt.
Nevertheless, I was gifted some very tasty Tigernut Spread and Tigernut Granola from Natureul.com. I waited anxiously for my package. As soon as it arrived I opened up the Granola and was so over the moon happy when it was so delicious. I immediately thought of this recipe. I couldn’t wait to make it.
Obviously, it made me think of Easter. I don’t know why, but it did. Hippity-hoppity Easter is on its way. Evidently, Spring is here. Of course, it doesn’t appear to be where I am, as we are still getting snow. Not to mention, I get to be that grandma who makes my grandchildren homemade candy.

What is a Tigernut:
Tigernuts are not actually a nut. Needless to say, they are a tuber. They are grown in Africa and Spain. Another name for Tigernuts is Earth Almonds. Making them perfect for those who are allergic to nuts or even peanuts. Consequently, they help aid the body in digestion. It should be noted, they are high in nutrients. Believe it or not, but they are nut-free, gluten-free, grain-free, dairy-free, allergen-free, Non-GMO, lactose-free, cholesterol free, low in fat, high in fiber, prebiotic, paleo, whole 30, AIP, Vegan, Vegetarian, raw food, contain anti-inflammatories, and no celiac issues. They contain micronutrients such as vitamin E, potassium, magnesium, calcium, and phosphorus.
They are sweet and nutty and taste similar to a nut. According to research, they taste like sweet potatoes and pecans.

Chef Notes:
Place chocolates into the freezer for less breakage of certain chocolate molds. Be careful when removing chocolate from the molds. Incidentally, I broke the ears off of several of my bunny truffles chocolates. However, the ones I froze were easier to remove. Tap the large Chocolate Chip mold on the counter to allow the chocolate to reach the tips.
Be careful and watch where the steam is when using a double boiler. Please note that depending on what size mold will determine how many servings are made. The recipe makes 4.7 ounces.
Tigernut Butter Granola Truffles
Ingredients:
- 4 (oz.) cocoa butter
- 4 (0z.) unsweetened Chocolate disks
- 1/3 cup coconut cream
- 2 tsp vanilla
- 1/3 maple syrup
- 1/3 cup coconut sugar
- 1 tsp salt
- 3 tbsp tigernut spread
- 1/3 cup of Tigernut Granola Banana Choco
Direction:
First and foremost melt the coconut butter in a double boiler over medium heat. Second, add the chocolate disks to the double boiler. Continue stirring melted. Finally add in the heavy cream, maple syrup, vanilla, and salt. Stir until the sugar is dissolved. Chop the granola into smaller pieces. Next, stir in the tigernut spread and the granola. Next, once combined pour into the mold of your choosing. Place into the fridge or freezer for a minimum of 2 hours. Lastly, remove and gently press the chocolate out of the form. Keep in mind some forms will be delicate and the chocolates can break. Eat or place into plastic freezer bags and add the chocolate to the freezer. Suitable for up to 6 months.

Instructions
