Smothered Onion-Mushroom Pork Chops are a Southern classic and family favorite. Juicy pan-seared pork chops in a tasty gluten-free onion and mushroom sauce. In fact, allowing the pork chops to simmer in the sauce keeps them tender and moist. Needless to say, this is Fall comfort food at its finest. Indeed, the gravy is so flavorful you will want to lick your plate clean.
What is Smothered Onion-Mushroom Pork Chops:
First and foremost, here is a short list of side dishes: roasted cauliflower, cauliflower rice, rice, cauliflower mash, or even mashed potatoes. As a result, these luscious pork chops are definitely one to add to your meal rotation and repertoire. Naturally, as busy moms, we are always looking for quick and easy meals to feed our family. In any case, these meal is fancy enough for company as well.
Begin by searing these pork chops for a couple of minutes per side as this will make them golden and keep them moist. Incidentally, adding flour to the oiled and caramelized onions and mushrooms is the European way of thickening sauces. Not only is it easier it is quicker and requires no second pan. In any case, the tapioca flour adheres to the oiled vegetables while slowly melting creating a compound thickened sauce. Therefore using Tapioca flour makes a gluten-free gravy.
Chef Notes:
Last but not least be sure to use tapioca flour if desiring to create a gluten-free sauce. Believe it or not, Tapioca Flour is not the same as Cassava Flour. Be sure to see my blog post on Cassava Flour Information.
In conclusion, occasionally, I decorate the finished product with a little balsamic vinegar drizzled on top with a little fresh parsley. Indeed, this dish is great for any time of year. Without a doubt, it is a southern vintage comfort food.

Ingredients:
- 4 thick-cut pork cut in half (l.5 lbs)
- 4 tbsp olive oil
- 2 cup onions
- 1 cup mushrooms
- 4 tbsp tapioca flour
- 2 cups beef broth
- 2 cups water
- 1 tsp onion powder
- 2 tbsp balsamic vinegar
- 1 tsp garlic powder
- 1/4 tsp paprika
- 1 1/2 tsp pink salt
- 2 tsp AKA Worchestershire Sauce
- 1 tsp parsley
Directions:
First, heat up the olive oil on medium heat. Second, salt and pepper on both sides of the pork chops. Third, sear both sides of the pork for approximately 3-4 minutes per side. Next, remove the pork. Finally, caramelize the onions and mushrooms. Once, caramelized add the tapioca to the top of the onions and mushrooms. Finally, stir the onions and mushrooms until the tapioca flour is combined. Be sure to scrape off the bottom of the pan. Next, add in water and beef broth. Hence, continue to stir until it thickens. Thickening the sauce may take a minute or two. Finally, add the remaining ingredients except for the parsley. Continue stirring even once in a while until gravy thickens. Top with parsley or drizzle with Balsamic Vinegar.

- 1 tsp garlic powder
- 1 1/2 tsp pink salt
- 2 tsp AKA Worchestershire Sauce
- 1 tsp fresh Parsley
- 1 pinch salt and pepper to taste on pork chops
