My recipes are grain free, refined sugar free and most are dairy free. When you make a Prime Rib for dinner you almost always make Au Jus. Well, I do because my family prefers to soak their small cut pieces of Prime Rib into it. I believe that the medium-rare meat soaks up the au jus better than well done meat. Therefore you want the Au Jus to be flavorful and tasty. This is a wonderful addition to your Prime Rib dinner. You can have prime rib without the au jus. If you have never had Prime Rib and au jus before then you are in for a treat. After making the prime rib make the au jus. I generally give 1/4 cup to 1/2 cup per person.
If using bone-in Prime Rib cut off one bone and add to your au jus. It will make better flavor than without a bone. Allow the bone to cool before cutting off of the prime rib. Use with my Keto Prime Rib and Keto Nevada Sauce recipes.
2 cups water
1/3 cup liquid in the bottom of Prime Rib roasting pan
1/2 teaspoon Keto Prime Rib Rub
2 cups of beef broth (homemade or store-bought)
1/8 teaspoon fresh cracked pepper
2 teaspoons Keto Nevada Sauce
After cooking the prime rib and removing it from the oven to cool. Remove meat from the roasting pan and place on a plate or platter to cool do not cover. Pour 2 cups of water into the roasting pan and scrape the bottom making sure to get all the tasty bits into your water (deglaze). Then pour off the about 1/3 of the juices from the pan. Reserve the rest of the juices in the roasting pan for gravy (if you want gravy). With the 1/3 cup of juices pour or skim off the fat from the juices. Pour whatever remains from the 1/3 cup (after the fat has been removed) into a pot. Next add seasonings, Keto Nevada Sauce, and beef broth. Bring to a simmer. Turn off heat and pour into serving bowls for your guests. Each individual should have approximately 1/4 – 1/2 cup of au jus.
