My recipes are recipes are grain free, refined sugar-free and most are dairy free. I love creating new recipes in my kitchen. A friend recently asked how I came up with this recipe. I don’t know if this will make sense to anyone but me. I first thought about what I had in my fridge. I had ham, mozzarella, spinach, and basil. I had defrosted chicken breasts. I thought maybe I could put them all together. So why not try. I did. I have this wonderful Garlicky Onion Seasoning and thought that would go nicely with the dish I was creating. Next was to decide what to put inside. I decided to add all of it to the chicken and hope for the best. This dish was so much better than I expected. I got rave reviews from my family.
Next, I butterflied my chicken and hammer it out. That way I had a nice thin piece of chicken. My chicken did rip apart a little so the last little piece of chicken I wrapped in ham. I got several large pieces that I sliced into long 2 to 4 inch strips. The strips made it easier to lay the spinach, basil, ham, and mozzarella down and roll up. Not only is this dish delicious but it is beautiful to look at. Serve with my Maple Mustard Sauce.
In the end, I put a small slice of mozzarella on top of the rolls, the drizzled Maple Mustard Sauce and topped with Basil Chiffonade. This made 9 American Chicken Saltimbocca rolls.

2 lbs chicken breasts
1 tablespoon garlicky onion seasonings
8 – 10 spinach leaves per roll
1 half a slice of thin ham (luncheon meat – no nitrates)
1 -2 basil leaves per roll
1 small slice of mozzarella per roll
salt and pepper
Preheat the oven to 425 F. Butterfly the chicken and pound them out thin layer. Salt and pepper both sides of chicken. Sprinkle both sides of chicken breasts with the Garlicky Onion Seasoning. Slice into serving size strips. Cover the top with spinach, then lay down the half slice of ham, next add the basil and then a slice of mozzarella. Roll the chicken up into small rolls. Place toothpicks in them to keep the rolls closed. Place your chicken rolls into an oiled dish. Place inside oven and bake for 25 – 35 minutes. Serve with maple mustard, a slice of mozzarella and top with chiffonade basil. Remember to remove toothpicks before serving.
*Chiffonade means to roll the basil into a cone and slice the basil. I then go back and slice the strips into small pieces.
