Gluten-Free Chocolate Mint Cookies

Gluten-Free Chocolate Cookies are nice crisp chocolate and mint cookie. What a nice cooling treat for any time. This recipe came about after I had leftover egg whites from making a large batch of mayonnaise. However, I did not want to have to throw the egg whites out. These crisp mint cookies are a cooling treat to top off any meal. Mint and chocolate compliment each other very well. In all honesty, they would also go well with Dairy-Free chocolate mint soft serve ice cream and a cookie.

Hard to believe that it has been a little over a year since I switched my dietary lifestyle for health reasons. However, for health reasons, I no longer eat any grains including rice or corn, refined sugar and I limit my dairy. In fact, I write many dairy-free recipes as my kids are allergic to dairy. Such a difference a year can make. In fact, I now have a feel for the Cassava flour I use. I can look at the dough or batter and know that it needs more liquid or more flour. I now know when the texture of bread or cookie is off by the feel of it. Alternative flours do not react like any flour I have ever used to make bread, cakes, or pastries.

Notes:

Gluten-Free Chocolate Mint Cookies came about as a way to use up some egg whites that I had leftover. I have carob powder, cacao powder, and cocoa powder in my pantry so why not use them all. For more information about monk fruit information and cassava flour information read my blog posts.

Monk fruit sweetener can be found at local grocery stores or at Amazon. Needless to say, my family and friends loved these cookies. Not to mention that these cookies are reminiscent of a French Macrons.

Cookies are always a nice snack or dessert to have on hand. In any case, this recipe does not have a typo. Cocoa is powdered raw cacao which has been roasted. However, carob is also roasted but has a different flavor and texture to the chocolate. While you could just use all carob or all cacao or all cocoa. I have all three in my pantry and so, therefore, used all three. In any case, feel free to use the ingredient or ingredients that you have on hand.

Gluten-Free Chocolate Mint Cookies

Ingredients:

  • 2 cups monk fruit sweetener
  • 2cups almond flour
  • 1/8 cup carob powder
  • 1/8 cup cacao powder
  • 1/8 cup cocoa powder
  • 7 egg whites
  • 1/2 tsp cream of tartar
  • 1/8 cup powdered monk fruit
  • 1 tsp peppermint

Directions:

Grease cookie sheets. Combine the powdered monk fruit sugar, almond flour, carob, cacao, and cocoa stir until combined.Combing Ingredients, carob, cacao, cocoa, almond flour and monk fruit
Next put the sugar and cocoa mixture through a sieve.Putting ingredients through a sieve
Set aside. In a stand mixer add egg whites and blend until frothy 1-2 minutes. Add cream of tartar, 1/8 cup powdered monk fruit sugar, and peppermint. Beat egg whites until stiff peaks form approximately 6-7 minutes.Beaten Egg Whites
Remove from mixer and slowly folding in a little almond flour mixture a little at a time. Stir together until you can make a figure 8 without the dough breaking. Using a cookie scoop and scoop out a cookie and place on the cookie sheet.Cookie Dough on a cookie sheet
Bake 15 -20 minutes.Baked Cookies on Cookie Sheet
Remove from oven and place on a cooling rack. Allow cooling place in an airtight container.

  • Preheat oven to 350F. 
  • Grease cookie sheets. 
  • Combine the powdered monk fruit sugar, almond flour, carob, cacao, and cocoa stir until combined.
