Needless to say, these cookies these airy cookies will have you craving just one more cookie. In fact, in Sweden, these tasty cookies are called “Drömkakor”. Roughly translated it is Dream Cookie. These classic vintage cookies are from your Grandmother’s era. Believe it or not, it contains one secret ingredient. The ingredient is Ammonium Carbonate. It is an ingredient in smelling salts but it makes a delectable cookie.

Hence, Ammonium Carbonate is a vintage ingredient from days of yore. While most stores no longer carry this ingredient. Amazon does sell it. It is still used in Europe. Indeed, this ingredient is what gives these cookies their crispy melt-in-your-mouth taste. As well as with distinctive crispiness and light texture.
Why Use Ammonium Carbonate:
Most importantly, you need to be aware of the Ammonium Carbonate and its nasty smell. Indeed, once the cookies are baking there will be a little smell coming from your oven. In other words, it smells because Ammonium Carbonate is a rising agent. It is heat-activated. In all truth, these cookies are so worth it.
Needless to say, without this one ingredient, you can not accomplish the texture and crunchiness. In conclusion, the smell cooks off during baking. As a result, don’t smell this ingredient. It is very strong. Indeed, this ingredient is what gives these cookies their crispy melt in your mouth with distinctive crispiness and light texture. Amazon has monkfruit in white and Golden Monkfruit Sweetener. They are the same except for the color.

Is Ammonium Carbonate Safe to Eat?:
Ammonium Carbonate is released once cooked. It is safe in small amounts. Most importantly, keep it out of the reach of small children.

Ingredients:
- 1 cup of softened butter
- 3/4 cup monkfruit sweetener
- 1/2 tsp vanilla powdered monkfruit sweetener or vanilla extract
- 1 1/2 cup cassava flour
- 1 tsp Ammonium Carbonate
Directions:
First, preheat the oven to 325 F. Second, cream together butter and monkfruit sweetener until thoroughly. Next, in a separate bowl combine stir together the vanilla monkfruit sweetener, cassava flour, and ammonium carbonate. Finally, add flour a little at a time while blending with the sugar. Next, remove a small amount of dough and roll it into a ball, or use the smallest cookie scoop. Place small balls onto a greased cookie sheet. Lastly, place the cookies into the oven and bake for 14 – 17 minutes. Remove and allow to cool slightly. Makes roughly 50 cookies.

- Lastly, place the cookies into the oven and bake for 14 - 17 minutes.
- Remove and allow to cool slightly.
- Makes roughly 50 cookies
- Store in an air tight container.
