Gluten-Free Key-Lime Meltaway Cookies are a tasty crisp little buttery lime-flavored cookie that will melt away in your mouth. Soon to be a family favorite. Indeed, this crispy and crunchy cookie almost melts in your mouth. A uniquely sweet and tart cookie that can also be dusted in powdered monk fruit sweetener. Needless to say, this is one of the cookies I bake for the Christmas season. Consequently, I have been making these cookies for over 25 years.
Gluten-Free Key-Lime Meltaway Cookies
Believe me, I know that this time of year can be a time of feeling left out or excluded because of the vast amount of foods you can not eat. It can make you feel isolated. I hope that my recipes will make it so that more people can share food and begin socializing with family and friends again. Maybe even some family and friends will add one or two of my recipes to their repertoire.
By the way, this year I am more comfortable going to potluck parties as now I have things to bring and am not as tempted to eat food that I should not. I can also bring my own crackers that I could add cheese too.
I think it would be fun to one day be a mentor of restaurants that might want to add a grain-free item or two to their menu. That would be fun. It would be nice if someday there were grain-free and refined sugar-free restaurants where everyone could enjoy something good to eat.
At any rate, I absolutely love lime flavored items. Not to mention, have adapted it to be grain-free. In short, I must say that even my family prefers this cookie to the one with grain flour in it. All in all his cookie is so good you won’t be able to stop eating them. In summary, I am making my family pace themselves so that we can have some for Christmas.

Not to mention Gluten-Free Lime Mealtaway Cookies uses powdered monk fruit sweetener and powdered coconut sugar. To make either of the sugars simply pour the amount of sugar you need into a high-speed, high-quality blender and blend until powdered. Carefully when lifting the top off of the blender as there will be powder in the air.

Gluten-Free Key-Lime Meltaway Cookies
Ingredients:
- 3/4 cup room temperature butter
- 1/2 cup powdered monk fruit sweetener
- 1/2 cup powdered coconut sugar
- 3 zested limes
- 5 tbsp fresh key lime juice from key limes or key lime juice
- 1 tsp pure vanilla
- 1 1/2 cup cassava flour
- 2 tbsp tapioca flour
- 1/4 tsp salt
Directions:
First, preheat oven to 325 F. Secondly, grease cookie sheets. Thirdly, cream butter with a mixer. Next, add powdered monk fruit sweetener, powdered coconut sugar to the butter until well combined. Add in lime zest, lime juice, and vanilla to the butter.Finally, in a separate bowl combine cassava flour, tapioca flour, and salt. Next, add half of the flour to the butter mixture until completely mixed in.Add in the remaining flour until the batter is thoroughly combined. Knead the dough into 4 separate balls. Roll each ball into a long log and wrap it in a piece of wax paper and refrigerate for several hours.Remove dough logs from the fridge and cut them into coins. Lastly, place coins on the greased cookie sheet.Bake 15- 20 minutes or until light brown. Allow to cool slightly and remove from cookie sheet.
If you want a powdered cookie top toss cookies in with powdered monk fruit cookies in a sealable plastic bag and shake until cookies are covered in powdered sugar.

- 2 tbsp tapioca flour
- 1 tsp vanilla
- 1/4 tsp pink salt
Instructions
- Preheat oven to 325 F.
- Grease cookie sheets.
- Cream the butter in a stand mixer.
- Add powdered monk fruit sugar and powdered coconut sugar to the butter until well combined.
- Add lime juice, zest, and vanilla to the butter.
- In a separate bowl combine cassava flour, tapioca, and salt.
- Add 1/2 the flour to the butter mixture until completely mixed in.
- Add remaining flour until the batter is thoroughly combined.
- Knead dough into 4 separate balls.
