Mesquite Tin Foil Chicken will have your taste buds awaiting each and every delectable morsel that you devour. Not to mention the fact that there will be a slight kick to your BBQ sauce. Indeed, I doubt friends and family will be able to tell the secret ingredient is curry. While the curry adds a touch of heat it also adds a hint of flavor that kicks up the BBQ sauce a notch. This chicken moist, tender and delicious it is also a KETO meal with only 2 carbs per serving.

Often, times we find ourselves running around trying to accomplish our tasks for the day while forgetting to remember what to cook for dinner. What to do? Well, if you have frozen chicken in your freezer this meal comes together in no time. Simply make the tin foil packet. Place the packet in the oven and forget about it until the timer goes off and dinner is served in no time flat. Easy peasy.

Not to mention that this dinner can also be made from thawed chicken and in fact, takes less time to bake. Needless to say that you can still serve your family a from scratch meal without grains, dairy, refined sugar or hydrogenated oils. Not to mention that this dish is super easy to make and as a matter of fact easy to clean up.

Sauce or no sauce for you Mesquite Tin-Foil Chicken:

Not only can this dish be served as is or use the juices to create a sauce to top your chicken with thereby making it a little versatile. Did I mention that this is a vintage recipe of sorts as when I was younger this was all the rage?

Since I can’t buy store bought BBQ sauce I have to make my own. My favorite is the Hickory BBQ sauce used in not only this recipe but many others.

Notes:

I still can’t believe that I have written a recipe a day for almost 1 year. How is that possible? My family jokes that they won’t get to taste them again for another 4 years. I adore variety and am very eclectic in almost every aspect of my life.

Mesquite Tin Foil Chicken

Ingredients:

  • 4 chicken breasts
  • 1/2 cup Mesquite BBQ Sauce
  • 1/4 tsp curry
  • 1/2 tsp Mesquite liquid smoke
  • 1/4 tsp cumin
  • pink salt and pepper

Directions:

Preheat oven to 400 F. Rip off a piece of tin foil and fold in half. In a small bowl combine bbq sauce, curry, liquid smoke, cumin, pink salt, and pepper stir until combined.

Next salt and pepper chicken.

Lastly, add 1/8 cup BBQ Sauce on top of the chicken.

Crimp and seal. If using thawed chicken breast bake 25 minutes to 30 minutes. If using frozen chicken bake 45 minutes – 1 hour.

Mesquite Tin Foil Chicken

Mesquite Tin Foil Chicken is full of mesquite flavor with a hint of curry, cumin and liquid smoke for bbq flavor. Quick and easy as well as quick clean up.

Ingredients

  • 4 chicken breasts
  • 1/2 cup Hickory BBQ Sauce find the recipe on my blog
  • 1/4 tsp curry
  • 1/2 tsp mesquite liquid smoke
  • 1/4 tsp cumin

Salt and Pepper to taste

Mesquite BBQ Sauce. Pour in the liquid from the tin foil packets into a saucepan.

  • 2 tsp tapioca flour
  • 1/4 cup water

Instructions

Mesquite TIN FOIL CHICKEN

  • Preheat oven to 400 F. 
  • Rip off a piece of tin foil and fold in half.
  • In a small bowl combine bbq sauce, curry, liquid smoke, cumin, pink salt, and pepper stir until combined. 
  • Next salt and pepper both sides of the chicken breasts. 
  • Crimp and seal. 
  • If using thawed chicken breast bake 25 minutes to 30 minutes. If using frozen chicken bake 45 minutes – 1 hour. 

Making Sauce from the packet juices

  • First, stir together the tapioca and water to make a slurry.
  • Bring the Packet juices to a simmer in a saucepan on the stove over medium heat.
  • Once it has become to simmer add in the slurry and stir until the desired consistency.
  • Remove from heat and add a little of the sauce on top of the chicken.
