Olive Citrus Chicken is infused with sweet citrus and garlic flavor. Needless to say, the flavor of this chicken will blow you away. Add orange juice, lemon juice, white wine, and garlic stuffed green olives, season these chicken breasts. Keto to boot with 5 grams of carbs. So tender you can eat it with a fork. Enjoy as-is or with a gluten-free carb.  To add more carbs or another level add Zoodles, Spaghetti Squash, or even gluten-free pasta. A close-up picture of Olive Citrus Chicken.

Moreover, I wanted to create a new chicken recipe that would be reminiscent of a Piccata chicken. Indeed, this is a new spin on an old favorite dish. However, my favorite green olives are garlic stuffed. Therefore I  chop them up into very small pieces as then it adds a salty flavor to the dish but not an overly olive flavor. Adding some of the brine from the garlic stuffed olives adds a garlic flavor to the dish. In all honesty, my husband and son are not fond of green olives but I don’t think they even realized that they were inside this dish and they both loved this dish.

Most importantly, using fresh lemon juice and fresh orange juices will enhance the briny garlic flavor and bring moisture to the pounded-out chicken breast. Butterfly means to cut open the chicken like a book cutting horizontally.

Nevertheless, butterflying the chicken will allow the chicken to cook quicker.

Subsequently, I pray for inspiration and every day around dinner time inspiration comes. You are free to believe whatever you want as for me I believe that inspiration comes from above and I for one am grateful and thankful. Yacon has some great research behind it suggesting that it reduces high blood pressure and contains probiotics as well. I highly suggest you do your own research and see if it is something you want to add to your diet. Yacon can be found at Amazon. In other words, be sure to check out Yacon Syrup Information Blog Post if you have never heard of or used this product.

Olive Citrus Chicken

Ingredients:

  • 2 lbs chicken breast
  • 1/3 cup freshly squeezed orange juice
  • 1/4 cup freshly squeezed lemon juice
  • 4 tbsp brine juice from a jar of garlic stuffed olives
  • 6 chopped green garlic stuffed olives
  • 1/2 tsp pink salt
  • 1/2 tsp onion powder
  • 1/4 tsp Yacon Syrup
  • 1/2 tsp garlic powder
  • 3 tbsp white wine
  • salt, pepper, garlic powder, onion powder to taste
  • 4 sprays of avocado oil

Directions:

First, combine the orange juice, lemon juice, juice from the olives, pink salt, onion powder, Yacon syrup. garlic powder, and white wine. Second, butterfly chicken breast and pound out into thin slices using a meat tenderizer mallet.Pounding chicken out thinly Salt, pepper, garlic powder, and onion powder on both sides of the chicken to taste. Add 2 sprays of avocado oil to a pan and heat to hot. Once the pan is hot add 1 – 2 pieces of thinly pounded-out chicken. Brown the chicken. Once browned flip the chicken over.
Remove chicken to a plate once it has been browned on both sides. Finally, add more uncooked chicken and continue to brown on both sides until all the chicken is cooked. If need be, add additional sprays of avocado oil to the pan.Cooking the chicken Remove cooked chicken to a plate. Lastly, Add citrus juices to the pan and scrape out the brown bits from the bottom until the bottom is free from brown bits.A picture of the sauce thickening Allow citrus juices to cook for 2 – 3 minutes. Ingredients

  • 2 lbs chicken breast
  • 1/3 cup freshly squeezed orange juice

  • 4 tbsp brine juice from a jar of garlic stuffed olives
  • 6 chopped garlic stuffed green olives
  • 1/2 tsp pink salt
  • 1/2 tsp onion powder
  • 1/4 tsp Yacon Syrup
  • 1/2 tsp garlic powder
  • 3 tbsp white wine
  • 4 sprays avocado oil

Salt, pepper, garlic powder and onion powder to taste both sides of the chicken

    Instructions

    • Combine the orange juice, lemon juice, juice from the olives, pink salt, onion powder, Yacon syrup. garlic powder, and white wine.

    • Butterfly chicken breast and pound out into thin slices using a meat tenderizer mallet. 
    • Salt, pepper, garlic powder, and onion powder both sides of the chicken to taste.

    • Add 2 sprays of avocado oil to a pan and heat to hot. 
      4 sprays avocado oil
    • Once the pan is hot add 1 - 2 pieces of thinly pounded out chicken. 
    • Fry until the chicken is browned on one side flipping to cook the opposite side. 
      2 lbs chicken breast
    • Once the chicken is browned on both sides remove chicken to a plate.
    • Finally, add more uncooked chicken and continue to brown on both sides until all the chicken is cooked. 
    • If need be, add additional sprays of avocado oil to the pan. 
    • Remove chicken to the plate. 
    • Lastly, add citrus juices to the pan and scrape out the brown bits from the bottom until the bottom is free from brown bits.
    • Allow citrus juices to cook for 2 - 3 minutes. 
    • Add in the chopped olives and return chicken to the pan. 
      6 chopped garlic stuffed green olives
    • Once the chicken is warmed remove from the pan and plate with a few teaspoons of sauce from the pan.

        It really is a lovely chicken dish. I am originally from Idaho where Asparagus grows wild on the side of the roads or down in ditches. When I was a kid I thought it was funny that people bought it. But, now that I live in a state that does not have wild asparagus, I understand.
