Dairy Free Coleslaw


My recipes are grain free, refined sugar-free and most are dairy free. If you are grain free, refined sugar free and dairy free, what do you miss? I miss some of my favorite take-out foods. I love coleslaw and I am glad I found a way to make it again. I have followed Todd Wilbur for years. He writes copycat recipes of many of my favorite restaurants. Below are revisions that I made to Todd Wilbur Copycat KFC Coleslaw recipe. I make my own mayo as all the ones on the market are made with oils that I can not have. One average size cabbage makes about 8 cups. This recipe uses one medium carrot. Goes well with Keto Buffalo Burgers or Chicken Strips


8 cups shredded cabbage

1/4 cup shredded carrots

2 tablespoon minced onion


2 cup homemade mayonnaise

1/3 cup monk fruit sugar

1/4 coconut milk

3 tablespoons lemon juice

1 1/2 tablespoons white vinegar

1/2 teaspoon salt

1/4 t pepper


In a food processor with a medium blade shred the cabbage and carrot.  Place the cabbage in a bowl. Using a microplane scrape the onion across the blade to finely shred it into the bowl with cabbage mix. Next, make the dressing. Combine all the ingredients blend until smooth. Add to the cabbage mix and stir until incorporated. Cover and refrigerate. Refrigerate 2 hours before serving. Serves 10-12
