Sun Kissed Pork Chops

My recipes are grain free, refined sugar free and many are dairy free. My whole dietary world changed in October 2017. With the help of a functional medical doctor, my diet was revamped to improve my health. The biggest change has been my energy level. Have ever woken up exhausted and feel like you are dragging the whole day? That was me every day. Exhaustion is horrible. People will give you all kinds of advice that are not useful. I have autoimmune illnesses but I don’t look sick. I do have more energy and hope that one day it returns to 100%. For now, though I am happy that I have more energy and feeling better.

Thanks so much for taking the time to read my blog and look at my recipes. Some days I am filled with self-confidence and some days I am not. I think most people are like that. So if you are having a bad day I am sorry. I pray and hope for a good day for you tomorrow. Life is hard. Some days all anyone needs is a smile, a kind word or just “Nice Day” to change how they feel about the day. Have a great day or night where ever you may be.

This recipe like so many just seemed to sit around in my head and sift through this idea and then that idea. It finally came together and the flavor profile was a light citrus and had a sun dried flavor. The color of the pork chops are beautiful too.

4 thick cut pork chops

4 tablespoons lemon juice

2 tablespoon maple syrup

2 tablespoons sun-dried tomatoes

2 teaspoons onion powder

2 teaspoons salt

2 teaspoons tomato paste

1 teaspoon balsamic vinegar

2 teaspoons avocado oil

Preheat oven to 350. Combine the ingredients in a small bowl until well blended. Place approximately 1 tablespoon of sauce on both sides of each pork chop. Turn an electric stove on medium heat. Add avocado oil to an ovenproof frying pan. Once hot add pork chops to the frying pan. Brown each side of the pork chops. Once pork chops are browned place frying pan into the oven and bake 15 – 20 minutes. Remove from oven allow to cool for 10 -15 minutes. Serve with remaining glaze.

  1. Exhaustion is terrible and I can vouch that going sugar free has made a remarkable difference!! Sugar is addictive and it only takes a few days to get it out of your system and you instantly feel better.
