In a separate bowl stir together the almond flour, cassava flour, sugar, and cardamom. Next, stir in the melted coconut oil until combined. Place the topping into the fridge.

Ingredients
2/3 cup room temperature coconut oil
3/4 cup powdered monk fruit sweetener
2 whole eggs at room temperature
3/4 cup cassava flour
3/4 cup almond flour
1 tsp fresh cardamom
1 1/2 tsp baking powder
2 tbsp powdered vanilla monk fruit sweetener
3/4 cup fresh blueberries
1 cup room temperature nut milk of choice

First and foremost, preheat the oven to 350 F. Second, grease a 9 x 5-inch loaf pan well. Third, blend the coconut oil in a bowl with a hand-held mixer and blend until smooth. Fourth, add the powdered monk fruit sweetener and blend until creamed. Add the eggs to the creamed mixture.
In a separate bowl, stir together cassava flour, almond flour, cardamom, baking powder, and 1 tsp of powdered vanilla monk fruit sweetener until thoroughly combined. Next, stir together the remaining powdered vanilla monkfruit and the blueberries.
Finally, add half the room-temperature milk and half the flour mixture to the egg mixture and blend until combined. Add in the remaining milk and flour mixture and blend until combined. Fold in the blueberries. Using a spatula add the batter to the greased loaf pan.
