Gluten-Free Chocolate Blackberry Cake is a decadent chocolate fudge cake filled with blackberry curd. Incredibly, this luscious and scrumptiously moist cake is a little slice of heaven. Have you ever had a bite of something so decadent that it leaves an indelible taste imprint on your brain and tastebuds?  Needless to say a bite of this cake will have you craving it time and again. Did I mention there are also slices of blackberries hidden in the middle?Gluten-Free Blackberry Cake on a corner angle.

Gluten-Free Chocolate Blackberry Cake:

Incidentally, this was the brainchild of my desire to enjoy a slice of cake with my son on his birthday. At any rate, I asked my son what kind of cake he would like. He simply stated that he wanted a chocolate cake. Since it was for my son’s birthday I, therefore, wanted something that would be something he would crave.

Hence, I immediately thought of a chocolate fudge cake. In short, I had blackberries in my fridge and as soon as I saw them a recipe began to write itself in my brain. Inspiration took hold and the recipe basically wrote itself. All in all this cake is so tasty and moist you won’t believe it is dairy-free, refined sugar-free with tons of blackberry flavor from the blackberry coulis, blackberry curd, and the fresh slices of blackberries.

6-inch square cake pans and decorating spoons for plating can be found on Amazon. To summarize this cake goes together a whole lot faster if you make several of the components ahead of time. For example, I made the blackberry coulis and blackberry curd the day before making this cake a breeze to put together the next day. While this cake does take time to make it is so worth it.

Consequently, this is a large cake in Europe. Needless to say, this cake took my family of 4 three days to eat as we all had small pieces as the pictures show.
