Needless to say, this recipe is full of fall flavors whisking away the worries of the day. This luscious pumpkin spice cake is topped with mascarpone and cranberry sauce. Not to mention, it is quick and easy to make. In any case, I decorated the top with some basil flowers.
The holidays are coming! The Holidays are coming! Can you tell I love the holidays? However, over two years ago at this time I was disappointed and not looking forward to Thanksgiving or Christmas as I felt I would not be able to eat anything. In any event, this year is different. Indeed, it can feel so isolating not being able to enjoy holiday traditional foods and treats. Furthermore, this is a European-style cake. Hence, it only has approximately 6-10 slices. Perfect for a small family.
Pumpkin Cranberry Tier Cake:
By the way, this is a thin pumpkin cake sliced into thirds and top with a cranberry mascarpone filling. Believe it or not, the cake is a breeze to make and bakes in 5 to six minutes (don’t overcook it). Yep. Nonetheless, it bakes at 480 F. Yes you heard that right.
My son had some friends over and as a result, I asked them to be my guinea pigs. It is for this reason, that I want to take a moment to brag about my son and his friends, who are teenagers and are kind, polite, respectful and amazing, smart, and talented. While I know every generation normally disses the teens of their day. Nevertheless, there are and always will be wonderful, amazing teenagers in every era.
At any rate, they were really surprised that it was gluten-free as it is so moist. One of my son’s friends said he has never had a grain-free moist cake before. Needless to say, they all loved it and even asked for the recipe as they want to make it.
Baking The Pumpkin Cranberry Tier Cake Tip:
To tell the truth nutritional facts will change in the event store-bought cranberry sauce is used in this recipe. Specifically, since I use Refined Sugar-Free Cranberry Sauce.

Pumpkin Cranberry Tier Cake
Ingredients:
- 3 eggs
- 1/3 cup pumpkin
- 1/2 cup monk fruit sugar
- 1/4 cup coconut sugar
- 1/4 cup nut milk or water or (coconut milk)
- 1 cup cassava flour
- 1 teaspoon cinnamon
- 1/4 teaspoon clove
- 1/4 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
Pumpkin Cranberry Tier Cake Directions:
First, preheat oven 480.Secondly, place a piece of parchment paper inside a quarter-sized sheet pan 9 X 13 inches and spray with coconut oil. Thirdly, combine the eggs, pumpkin, monk fruit sugar, and coconut sugar until completely mixed. Additionally, add Milk to the egg mixture. Set aside.
Next, in a separate bowl combine flour, cinnamon, clove, ginger, nutmeg, baking powder, and baking soda and stir until thoroughly combined. Additionally, add the flour mixture a little at a time to the egg mixture.Evenly spread into a baking pan lined with parchment paper that is sprinkled with sugar making sure it goes to the edges.Lastly, bake for 5 – 6 minutes careful not to overcook it. Remove and let sit for 30 minutes. Finally, once the cake has cooled cut it into thirds.
Mascarpone Cranberry Filling
Ingredients:
- 1 (8 oz.) container Mascarpone
- 2 tablespoons maple syrup
- 1/2 cup Cranberry Sauce
Directions:
Begin by allowing the Mascarpone to come to room temperature. Once at room temperature mix mascarpone and maple syrup until smooth. Next, blend in cranberry sauce. Use to fill a cake or fill Pumpkin Cranberry Tier cake.
Cake Assembly:
Start by placing the bottom third of the Pumpkin cake on a serving platter. Place a third of the Mascarpone and Cranberry Filling on top of the cake.
Finally, place the second cake layer on top of the filling. Followed by another third of the filling on the second layer of cake.
Lastly, place the last piece of cake on top of the other two filled pieces. At last, evenly spread the remaining third on top of the last tier.
Cranberry Sauce Topping
- 3 tablespoons Cranberry sauce
- 2 teaspoons grated lime zest
Directions:
First, of all, stir the cranberry sauce. Place a tablespoon of Cranberry Sauce one tablespoon on each end and one tablespoon in the middle. Carefully spread over the top of the Marsacapone and Filling. Decorate with lime zest.
