First, add the softened cream cheese to a stand-up mixer using the wire whip attachment. Second, blend until smooth being sure to scrape down the sides several times. Third, scrape down the sides add the coconut oil and monk fruit sweetener and blend until smooth. Scrape down the sides. In a fine mesh sieve add the dry ingredients the cassava flour, baking powder, baking soda, vanilla bean powder, and a pinch of salt. Finally, sift in about 1/3 of the flour mixture and blend until combined. Repeat until all the flour is added to the dough. Remove the dough and place on a sheet of plastic wrap. Using the plastic wrap press the dough together and form into a square shape. Allow the dough to set for one hour before rolling it out.
Lastly, roll the dough between two sheets of plastic wrap. Remove from the fridge and roll out into a rectangle about 1/4 inch thick. Approximately 9 inches by 14 inches. Trim the edges to get a perfect rectangle. Cut into one inch strips on the short side. Cut the one inch strips into two. Then cut those strips into a diagonal triangle. It is ok if they are not perfect triangles.

First, place one piece of chocolate into each triangle and starting on the longest side roll them. Start with the two widest corners of the triangle wrap the tail up. Prepare a rimmed baking sheet with a piece of parchment paper. Lastly, place the small shapped pastry onto the baking sheet.

- 1 large room-temperature egg
- 2 tsp water
Directions:
First, beat the egg with the water until thoroughly blended. Second, once the pastry is rolled out into small croissant shapes. Brush each pastry with the egg wash. Preheat the oven to 375 F. Bake approximately 8 – 12 minutes or until the lightly browned. Remove from the oven and allow to cool. Top with melted chocolate or powdered monk fruit sweetener.
