Not only are tin foil packets quick and easy to make but it makes for easy cleanup. Which means fewer dishes to wash.
Busy moms and dads are going to love how quick and easy this recipe is. In fact, place the ingredients into a tin foil packet crimp, and cook. In any case, BBQ and pepperoncini combine to make a wonderful smokey spicy flavor profile. This Tin Foil BBQ Chicken is wonderful as is or adds flavor. However, what makes this dish overwhelmingly tasty is bacon and melted cheese. The ooey, gooey stretchy melted cheese with crispy bacon sends this meal over the edge and into the realm of the divine. Just describing one bite of this meal will have you salivating.

Honestly, I created this recipe as I have been experiencing insomnia. Besides wanting to provide my family with a nutritious meal I also don’t have the energy to make a complex meal. Even while exhausted I can place my ingredients into tin foil packets and place them in the oven. Yes, I am also experiencing some brain fog.
So I might post a variety of tin foil meals until I get a whole night’s sleep. If I do I hope that my readers will still take the time to read my blog. While the recipes might be easy I promise they will still be visually pretty as well as tasty.
The cheese and bacon are both optional and are not necessary for the dish. However, if you can eat dairy or pork these two items will elevate the dish. In fact, I did find bacon I could eat that was hormone-free and free of other ingredients that I no longer eat.
Therefore, I have included nutritional facts with bacon and cheddar cheese as well as without cheese and bacon. The choice is yours. Tin Foil and Pepperoncini Peppers can be found in local supermarkets as well as on Amazon.
Tin Foil BBQ Chicken
Ingredients:
- 1/2 cup of Hickory BBQ Sauce
- 1/4 cup of coconut water
- 8 pepperoncini peppers
- salt and pepper to taste
- 4 large chicken breast
- 4 slices of onion
- *4 slices cut in half, cooked turkey bacon (optional)
- *8 slices cheese of your choice (optional)
Oven Directions::
First, preheat oven to 400 F. Rip off 4 large sheets of tinfoil. Fold in half. Combine BBQ sauce, and water coconut water. Place a chicken breast in each package. Salt and pepper on both sides of the chicken breast. Pour 1/4 of the bbq sauce on each chicken breast. Place a slice of onion and 2 pepperoncini per packet. Crimp edges and place on a baking tray. Bake for 45- 50 minutes. Microwave 4 slices of bacon for 5-6 minutes. Bacon will not be crispy but will continue cooking once on top of the chicken. Remove from the packet and open each one. Place two slices of cheese on each chicken breast and top with two pieces of bacon. Place back into the oven until the cheese is melted. Remove from oven. Remove chicken breast from the packet and pour juices into a pan.
Directions for Grill or Campfire:
First and foremost make sure to seal the packets so that none of the juices can escape. Place packets on the grill or campfire. Grill for 20-25 minutes and flip the packets over. Next, grill for another 20- 25 minutes. Carefully remove the packets and allow to cool slightly before opening the packets. Add 2 slices of cheese and top with bacon. Follow the directions below for the pan juices.
Pan Juices
- 2 tsp tapioca flour
- 1/8 cup water
Directions:
In a small bowl combine tapioca flour and water until it is a slurry. Pour the juices from the tin foil into a pan. Heat up the pan that the chicken juices are in. Once it begins to simmer pour in slurry while stirring the whole time until thickened. Pour some sauce over the top of the chicken or just serve without sauce.
