Asian Cucumber Salad is a great salad to add to any meal. A quick and easy homemade DIY vinegar and oil dressing. As a matter of fact, toasting the sesame seeds heightens the flavor of this salad. Indeed, it is nutty, with a hint of ginger and teriyaki, hit this salad and dressing out of the park. Cucumber salad topped with homemade Sesame Ginger Dressing. Needless to say, because of my memories of living in Japan, I wanted to pay respect to the food I ate when I lived there. Most importantly I wanted to create similar flavors without gluten. Hence, this is a gluten-free, grain-free, Asian Cucumber Salad and Dressing with a sesame ginger flavor profile.

May I just rave about the country for a moment, the people, the culture, the language, the customs, and traditions? Japan is an incredible experience and the people are so warm, kind, and friendly. However, if you have never been to Japan I highly recommend a trip. At any rate, I recommend staying in a Ryokan. What is a Ryokan? In all honesty, it is a Japanese-style Bed and Breakfast with tatami mats, and Japanese-style breakfasts if you like.

Consequently, nostalgia is what led to the creation of this dressing and salad. Nevertheless, when I lived in Japan I was often served a sesame cucumber and onion salad. Honestly, it was my hope to recreate this salad and dressing with my own twist.

Asian Cucumber Salad

Furthermore, Asian Cucumber Salad and dressing have an outstanding flavor and texture from roasted sesame seeds. In any case, this salad can be eaten by itself or as a topping to large spinach or Kale Salad.

Coconut Vinegar is in my humble opinion is the closest in taste to Rice Wine Vinegar. However, I still want to have Asian foods with Asian Flavors. Therefore, I have to substitute things with similar flavors to get the flavor profile I am going for. In all honesty, Coconut Aminos is my substitute for soy sauce. Moreover, my favorite Coconut Aminos come from Coconut Secret. Coconut Secret also makes Coconut Aminos Teriyaki Sauce. Feel free to substitute sesame oil for Black sesame oil.

At any rate, place the sesame seeds in a pan on medium heat for 3-5 minutes or until lightly browned stirring occasionally. To conclude, be careful not to burn them. In all honesty, the aroma and the taste are beyond measure. Enjoy!

Asian Cucumber Salad

Sesame Ginger Dressing Ingredients:

  • 1 tbsp coconut vinegar
  • 2 tbsp coconut aminos
  • 1 tsp coconut aminos Teriyaki sauce
  • 1/4 tsp fresh grated ginger
  • 1 tsp roasted sesame seeds
  • 1/4 tsp black sesame seed oil
  • 1/8 cup avocado oil

Directions:

First, in a small bowl combine all ingredients thoroughly. Makes about 5 servings.

Ingredients:

  • 1/2 cup Persian diced cucumbers
  • 1/4 cup chopped onions
  • * 1/8 cup thinly sliced baby bell pepper
  • 2 tsp Asian Sesame Salad Dressing

Directions For Asian Cucumber Salad

First dice cucumbers and chop onions. Second, place cucumbers and onions in a bowl with the dress. Next, allow the vegetables and dressing to sit for 20 minutes. Lastly, place the salad on a plate. Asian Sesame Dressing

  • 1 tbsp coconut vinegar
  • 2 tsp coconut Aminos
  • 1 tsp coconut Aminos Teriyaki Sauce
  • 1/4 tsp freshly grated ginger
  • 1/4 tsp black sesame oil
  • 1/8 cup avocado oil
  • 1 tsp roasted sesame seeds

  • 1/4 cup Persian diced cucumber
  • 2 tsp Asian Sesame Salad Dressing
  • 2 oz. baby bell peppers
  • 1 oz. diced red onions

Instructions

Asian Sesame Salad Dressing

  • In a small bowl combine all ingredients thoroughly. Makes about 5 servings.
    1 tbsp coconut vinegar, 2 tsp coconut Aminos, 1 tsp coconut Aminos Teriyaki Sauce, 1/4 tsp freshly grated ginger, 1/4 tsp black sesame oil, 1/8 cup avocado oil, 1 tsp roasted sesame seeds

Asian Cucumber Salad

  • First dice cucumbers, chop onions, slice baby bell peppers.
    1/4 cup Persian diced cucumber, 2 oz. baby bell peppers, 1 oz. diced red onions
  • Place the cucumbers, onions, and bell peppers into the dressing.
    2 tsp Asian Sesame Salad Dressing
  • Allow cucumbers and onions to sit and absorb the dressing for 20 minutes before using the cucumber mix to top a salad.
  • Lastly, place your ingredients over spinach and eat. Sprinkle the top with roasted sesame seeds.
  • Sprinkle the top with roasted sesame seeds.
