Chicken Stir-Fry is healthy, tasty, quick, and easy peasy. Needless to say, you’ll absolutely love this recipe. Full of veggies and chicken. Super healthy, tasty, and full of flavor. Indeed, this dish has it all crunch from the vegetables among pieces of chicken. In fact, if you are looking for a clean eating recipe this is it. However, if you want to kick this dish up another notch simply add several teaspoons per serving of Cashew Satay Sauce.
Chicken Stir Fry Recipe Notes
Versatility is Chicken Stir-Fry’s middle name. Consequently, this recipe gets switched up simply by using different vegetables. The first is chicken stir-fry and the second is to top the stir-fry with Cashew Satay Sauce.
Therefore, remember to wash your bok choy well to remove pieces of sand and dirt. By the way, that bok choy is similar to leeks and gets small particles of dirt in between the leaves. At any rate, I cut them up, place them in a sieve, and wash them thoroughly. Since I have black sesame oil and I used it in the sauce I used it in the stir-fry too. In summary, sesame seed oil and black sesame seed oil do taste different. Since I no longer eat grains I have substituted coconut vinegar as a replacement for rice wine vinegar. Needless to say, I have found these items at local Natural grocery stores and online. Coconut aminos are meant as a soy sauce replacement.
Consequently, quick and easy has recently become my motto. Incidentally, my family has been raving about this dish. At any rate, this would be perfect for lunch or dinner. Not to mention that this dish reheats nicely.
In conclusion, I prefer to cook in an electric wok. Amazon sells woks if you don’t have one. In any case, Chicken Stir Fry can be eaten as is or with other Cashew Satay Sauce.

Chicken Stir Fry
Ingredients
- 1 tsp avocado oil
- 2 lbs chopped chicken
- 1 cup chopped onion
- 1/4 cup chopped carrots
- 1/2 cup chopped broccoli
- 1/2 cup chopped bell pepper
- 1 clove minced garlic
- 1 tsp coconut vinegar
- 2 tsp coconut aminos
- 1/2 tsp black sesame oil
- 1 tsp pink salt
- 1/2 tsp and black pepper
- 1 cup sugar snap peas
- 1 cup snow peas
- 2 cups chopped bok choy
- 1/8 cup chopped green onions
- 1/2 tsp fresh squeezed lime juice
Directions:
First, hop all the vegetables to the size of your choice. Next, rub salt and pepper over the chopped chicken. Pre-cook the carrots for 2 to 3 minutes in the microwave. Heat an electric wok or frying pan over medium heat and add avocado oil. Once the wok or frying pan is hot add in chicken, carrots, broccoli, bell pepper, garlic, coconut vinegar, coconut aminos, black seed sesame oil, pink salt, and black pepper. Lastly, when the chicken is cooked through add in the bok choy, sugar snap peas, and snow peas, and continue cooking until the bok choy is cooked through. Remove from wok or frying pan and serve either alone or with Cashew Satay Sauce. Decoration: Add a little green onion, toasted sesame seeds, and freshly squeezed lime juice.
