Gluten-Free BBQ Chicken Pizza is a quick and easy way to get dinner on the table. The crust and chicken are both cooked. Therefore the pizza doesn’t need to be. Simply take the crust smear it with bbq cream cheese, and top with cheese, fresh vegetables of your choice, and cooked chicken. Indeed, it is the perfect dinner for those warm summer nights. Not to mention, that it uses up leftover chicken. What’s not to love? Needless to say, it goes even faster if the crust is pre-made and in the freezer. Simply defrost and begin. This clean eats low-carb recipe will have all your friends raving.
Gluten-Free BBQ Chicken Pizza
Believe it or not, years ago I used to make a pizza like this for my family. It was so nice as I didn’t need to use my oven. Hence, my oven wasn’t heating my house up in the summertime. Indeed, it brings back so many memories of sitting on our deck and eating a fresh vegetable and chicken pizza. Plus I love using up leftovers. Call it Leftover BBQ Chicken Pizza. Consequently, I use whatever fresh vegetables I have on hand. However, I do enjoy it with cauliflower.
Furthermore, if party food is needed why not double the recipe or make my Gluten-Free Fresh Veggie Pizza to go with it? Or simply cut up in smaller pieces for an appetizer, game night, tailgating, or Super Bowl party.
Kite Hill is my favorite vegan dairy-free cream cheese. Unbelievably, it tastes just like the dairy version. However, real cream cheese can also be used. Just keep in mind the nutritional facts use the Kite Hill, my Seasoning, and Hickory BBQ sauce.
Vintage Cold Appetizer Pizza:
In the 1980s there were a lot of Cold Appetizer Pizzas. Often offered at parties. Nevertheless, most of these pizzas were easy to make. The recipes called for the store-bought crescent dough to be rolled out and cooked. Then a cream cheese topping with veggies and more. It is from these memories that some of my recipes come. Perhaps it is simply nostalgia and the memory of spending time with family and friends.
Gluten-Free BBQ Chicken Pizza
Ingredients:
- 1 Family Size Gluten-Free Pizza Crust Cooked
- 7 tbsp bbq sauce of choice or Hickory BBQ Sauce
- 8 oz. of room temperature Vegan Cream Cheese or Cream Cheese
- 1 tsp Garlicky Onion Seasoning
- 4 oz of shredded cheese of choice (vegan or not)
- 5 oz of shredded cooked chicken breast or leftover chicken
- 3 sliced green onions with white and green parts
- 1/4 cup chopped roasted cauliflower
- * 2 tbsp black olives (optional)
Directions:
First, place the Cooked Pizza Crust into a bar pan. Second, stir together the cream cheese, garlicky onion seasoning, and BBQ sauce until well blended. Next, smear the cream cheese mixture over the pizza crust. Finally, top with cheese, cooked chicken, cauliflower, green onions, and black olives. Lastly, cut into squares, serve, and enjoy.

- 1/3 cup of chopped cauliflower or vegetable of choice
