Asian Red Cabbage Slaw

Ingredients:

Vinaigrette Dressing

  • 1/4 cup vegetable broth
  • 1/8 cup apple cider vinegar
  • 1 tbsp balsamic vinegar
  • 3 tsp coconut aminos
  • 1 tsp maple syrup
  • 1/2 tsp garlic paste
  • 1/4 tsp fresh ground ginger
  • 1/8 tsp chili oil
  • 1/4 tsp toasted sesame oil or sesame oil

Salad

  • 1/2 cup seedless cucumbers
  • 1/4 cup shredded carrots
  • 3 baby bell peppers chopped
  • 1 cup thinly sliced purple cabbage
  • 1/4 cup cilantro
  • 2 tbsp roasted chopped hazelnuts
  • * 1/2 cup cooked diced chicken (optional)

Directions:

Vinaigrette

First, pour all of the vinaigrette ingredients into a half-pint jar and shake until combined.

Salad

First and foremost, dice or spiralize your cucumbers. Second, Blot the cucumbers with a paper towel to remove any access moisture. Most importantly, first, add 3 tbsp of the vinaigrette to the jar. Reserve the remaining vinaigrette for another salad or use. Finally, place the cucumber on top of the vinaigrette at the bottom of the mason jar. Top with the chopped bell peppers followed by the shredded carrots. Add in the purple cabbage topped with the cilantro. Lastly, add the roasted chopped nuts. Place the lid on the jar. Variation:

First, add cooked diced chicken to the top for a higher protein count. Lastly, shake to combine and eat.

Vinaigrette Dressing

  • 1/2 cup shredded carrots
  • 3 small baby bell peppers chopped
  • 1 cup thinly sliced purple cabbage
  • 1/4 cup cilantro
  • 2 tbsp roasted chopped hazelnuts
  • *1/2 cup cooked diced chicken optional

Instructions

Vinaigrette Dressing

  • First, pour all of the vinaigrette ingredients into a half-pint jar and shake until combined.
