This small six-inch tart will feed 2 or 4 in a pinch. Consequently, it is perfect if serving for a high tea luncheon. Believe it or not, Earl Grey loose tea is steeped in coconut milk. Creates 4 six-inch tarts. Nevertheless, it can be served with or without chocolate covering. Occasionally, I make these tarts and cover two with chocolate, and leave the other two without. Therefore there is a slight variation.

In conclusion, these small tarts freeze very easily. Simply place in a plastic gallon resealable bag and place in the freeze. However, keep in mind the chocolate may bloom while in the freezer. What does bloom mean? It simply means that it gets a white discoloration. Nonetheless, it is still edible. In spite of this, you can top it with another layer of chocolate ganache if so desired or in the event you have company.

Earl Grey Caramel Tart
Ingredients:
- 1/2 cup maple sugar
- 2 bags Earl Grey Tea
- 1 can full-fat coconut milk
- 1 tsp vanilla
- 1/8 tsp salt
Directions For Earl Grey Caramel Tarts:
Make sure to grab a big enough pan so that when the ingredients boil caramel will not boil over. Open a can of coconut milk. Using a knife make a slit to pour out the coconut water. Place coconut water inside the microwave for 1 minute until very hot. Place tea bags into the heated coconut milk to steep for three minutes. Finally, remove and squeeze out the tea bags into a pan. Next, pour in the remaining coconut milk that is still in the can. Add in maple sugar, vanilla, and salt. and stir until combined.
Stir for 15 – 20 minutes until the ingredients begin to thicken. Continue stirring until when you stir the ingredients you can see the bottom of the pan. Allow thickening. If it should separate remove it from the heat and stir in 1/3 cup of coconut milk. If still separated stir in an additional 1/3 cup. Once it comes together to pour the caramel sauce into tart shells.
Chocolate Ganache Topping:
Ingredients:
- 4 oz unsweetened chocolate
- 1/4 cup canned unsweetened coconut milk or nut milk
- 3 tbsp Yacon Syrup or Swoon
Directions:
First Place chocolate and heavy cream into the microwave for 5-10 seconds at a time stirring afterward. Continue placing chocolate into microwave for 5-second intervals removing and stirring until chocolate is melted. Once the chocolate is melted add in Yacon Syrup until combined. If the chocolate seizes return it to the microwave for 20 seconds. Remove and stir. Pour a tablespoon or so over each tart. Place tarts in the refrigerator to chill. To remove tart pans simply place the pan on a smallish glass and push it down on the side ring. Lift off the glass and using a knife gently remove the bottom. Remove 20 minutes before serving. Makes 4 tarts with 8 servings.
