Gluten-free Blackberry Earl-Grey Biscuits are tasty treats of a heavenly concoction that will satiate your hunger. Indeed, they are perfect pillows with blackberries and earl-grey that pairs nicely with tea or coffee. Once your mouth bites into a large blackberry you will be in love with these biscuits. Enjoy them for breakfast, as a dessert, after school snack, or to serve when guests are over or even to a potluck. Any time these are served they disappear.
Often times I am looking for something new to make for breakfast or a sweet treat. I absolutely adore tea and have a huge variety of teas in my home. Earl Grey is one of my favorites and is often the tea of choice when we have colds in our house. Seeing the Earl Grey inspired me to want to bake. Blackberries were in my fridge and inspiration hit. Why not add the two together? That absolutely sounded amazing at least to me.
Since I am on a summer shred with my daughter I decided to send any extra with my husband to take to work. Not only are these biscuits gluten-free but they are grain-free, refined sugar-free, and dairy-free as well. All of my recipes are grain-free and refined sugar-free to help with my autoimmune illnesses.
These Blackberry Earl-Grey Biscuits are so yummy and tasty with lots of blackberries. These warm biscuits are so yummy fresh out of the oven but they are also great the following day. Please keep in my these Blackberry Biscuits are more of a European biscuit and are not the level of sweetness most Americans are used to.
Gluten-Free Earl Gray Biscuits Notes:
Not only are they super easy and quick to make as these biscuits are a drop biscuit they are beyond delicious. Combine all the ingredients together and then drop on a pan and bake 15 to 20 minutes.
Earl Grey and blackberries give a nice wonderful texture with a hint of sweetness. It could be served with clotted cream or a small dab of blackberry jam or as is. If you desire a more sweet flavor I suggest egg washing the biscuit and then sprinkling monk fruit sugar over the tops of them. Enjoy first thing in the morning or as a sweet to eat with tea or coffee or in Sweden with FIKA.

Gluten-Free Blackberry Earl-Grey Biscuits
Ingredients:
- 3 Earl Grey Tea Bags (roughly 1 tbsp)
- 1 cup cassava flour
- 1 1/2 cup almond flour
- 1/3 cup monk fruit sweetener
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1/3 cup coconut oil
- 1 beaten egg
- 1 cup coconut milk
- 1/2 cup strong Earl Grey tea (2 tea bags)
- 1 cup of Blackberries (or berry of your choice)
Gluten-Free Blackberry Earl-Grey Biscuits Directions:
Preheat oven to 425. Grease cookie sheet or baking stone. First, add boiling water to half a cup of water with two Earl Grey tea bags and set aside to steep.
Combine in the cassava flour, almond flour, monk fruit sweetener, baking powder, and baking soda together and stir until well combined. Next, cut open two tea bags of Earl Grey place the loose tea into the bowl with the cassava mixture large bowl.
Carefully stir the blackberries into the flour mixture with the earl grey teaThirdly cut in the coconut oil with a pastry knife until the flour resembles pea-size bits of coconut oil.
Remove the tea bags from the 1/2 cup of steeping earl grey tea. Throw the tea bags away or place into a composter. Open up a can of full-fat coconut milk pour into a bowl and whisk thoroughly until well combined. Pour out 1 cup of coconut milk into the bowl with of the 1/2 cup of Earl Grey tea and stir together. (Next, pour the remaining coconut milk into a sterilized container or glass jar with a lid and store in the fridge for other recipes or to put in coffee.) Then crack and beat the egg. Pour the egg into the infused coconut milk and Earl Grey tea and stir until combined.
Pour the liquid into the flour mixture and stir until well combined. Spoon and drop biscuits onto the greased cookie sheet or baking stone and bake for 15 – 20 minutes.Remove from oven and allow to cool. Serve with a little butter or jam.

- Pour the egg into the infused coconut milk and Earl Grey tea and stir until combined.

- Using two spoons drop biscuits onto the greased cookie sheet or baking stone and bake for 15 - 20 minutes.
- Remove from oven and allow to cool.
- Serve with a little butter or jam.
