Gluten-Free Chocolate-Chip Skillet Cookies with warm ooey and gooey chocolate oozing out of the cookie. Warm Chocolate Chip Cookies are the best. However, most people don’t bake cookies in the summertime as it usually is too hot to bake. Did you know you can grill your cookies? Yep. Why not infuse your chocolate chip cookies with a little smoke flavor. Can’t you just taste the smoked chocolate? I’m making myself hungry. Needless to say, this recipe is a small batch and gluten-free. Of course, it can be made in the oven as well. Below are directions for both. In any event, this makes two six-inch cast-iron skillet cookies perfect for date night.
Gluten-Free Chocolate-Chip Skillet Cookies:
In other words, something about melting chocolate makes my mouth water. I don’t know many people who don’t like chocolate. As a matter of fact, one of my best friends will hold her chocolate until it starts to melt. Sharon if you read this I hope you smile. Needless to say, I love chocolate chip skillet cookies. Indeed, they are perfect for any time. However, in the summer I prefer not to use my oven. Hence, I use the grill. Nonetheless, if you used it to make dinner it can be used to make dessert. Last but not least, I highly suggest using applewood, pecan, maple, or even hickory pellets to your Treager or smoke chips to a grill. Please note I have not used this on a gas or charcoal grill. So the time may be slightly off.
As Oscar Wilde said, “Life’s too short to be taken seriously.” Therefore, make sure to smell the roses along the way. Take time out to enjoy it and look forward to each coming day. Gluten-Free Chocolate-Chip Skillet Cookies
Ingredients:
- 1/4 cup room temperature butter
- 1 egg yolk
- 1/2 cup cassava flour
- 1/4 cup maple sugar
- 3 tbsp monk fruit sugar
- 1/2 tsp vanilla
- 1/4 tsp baking soda
- 1/8 tsp baking powder
- 1/4 cup chocolate chip (homemade or store-bought)
- 1/4 cup chopped chocolate bar (homemade or store-bought)
- 1/2 tsp instant coffee or espresso
Directions:
First, allow the smoker grill to preheat for 15 minutes. I use a Treager Grill. Second, turn the smoker up to 350 close the lid for 15 minutes to preheat. Third, cream the butter by blending with a mixer for a minute or two. Finally, combine the maple sugar and the monk fruit sweetener to get out any lumps in the maple sugar.
Additionally, add a little sugar at a time to the butter until it is all combined. Finally, add the egg yolk, vanilla, and instant coffee to the butter mixture. Next, blend together cassava flour, baking soda, and baking powder. Finally, combine the egg mixture with the cassava mixture. Lastly, fold in refined sugar-free chocolate chips and chopped chocolate. Press ingredients into two six-inch cast-iron skillets. Using a spatula, even out the batter in the skillet.
Place the skillet on the grill and bake for 18-24 minutes or until the edges are puffed. Most importantly, leave it alone as every time you open the grill the temperature drops. Furthermore, check the cookie after 18 minutes. Cook longer if needed. In conclusion, allow the cookie or cookies to rest for 5 minutes or you may burn your mouth. Trust me on this one. Top with ice cream, whipped cream, and toppings.
