Gluten-Free Mexican Chicken Pizza an incredible ooey and gooey melty cheese with homemade refried beans, enchilada sauce, and chicken taco meat. Pizza is one of those quintessential take-out items that everyone enjoys. Also, known as take away in Europe. Not to mention, that it is a perfect fit for Taco Tuesday. Indeed, this pizza is perfect for any time.
Pizza is a family favorite. However, since I am gluten-free and refined sugar-free it often means that I can’t eat take out. Needless to say, I also like using a recipe more than once. So when I had leftover Enchilada sauce I thought why not use it as a pizza sauce. Boy, was that a great idea. It was so tasty. I also had leftover refried beans and chicken taco meat. Hence with all these leftovers, this Mexican Pizza was born.
On the other hand, Enchilada sauce, refried beans, and chicken taco meat can all be made on the same day. Believe it or not, this is my family’s favorite pizza. Nothing tastes better than homemade. Although it will take some time to make this pizza it is so worth it. Indeed, it is more of gourmet pizza.
Gluten-Free Mexican Chicken Pizza
Ingredients:
- 1 Family Size Pizza Crust
- 1/2 cup gluten-free Jalapeno Enchilada Sauce
- 3/4 cup Jalapeno Refried Black Beans
- 1/2 cup shredded pepper jack
- 1/2 cup white cheddar
- 1/4 chopped tomatoes
- 2 tbsp cilantro
- 1/2 cup chicken taco meat
- 3 tbsp chopped red onions
- 3 radishes thinly sliced
- 1/2 cup chicken taco meat
Directions:
First, preheat the oven to 425 F. Place pizza crust on a pizza stone. Next, top pizza crust with Jalapeno Enchilada Sauce. Spread Jalapeno Refried Black Beans over the sauce. Finally, top the beans with cheese, tomato, cilantro, taco chicken meat, red onions, and radishes, and chicken taco meat. Lastly, place the pizza in the oven and bake until the cheese has melted 3- 5 minutes. Remove allow to cool. Slice and eat.

- 1/2 cup shredded white cheddar
- 1/4 cup chopped cherry tomatoes
- 2 tbsp fresh chopped cilantro
- 1/2 cup chicken taco meat recipe is on my blog
- 3 tbsp chopped red onions
- 3 whole radishes sliced
Instructions
- First, preheat the oven to 425 F.
